Christmas Putting the Fun in Dysfunctional since 1981..

I wasn't going to write about this Christmas.. but, I have decided that I have recovered from the shock of it all..
and here we go:
Twas the Eve of Christmas Eve and we were on our way to Georgia.. and we went a different way.. which turned out to be a blessing because 85 was backed up until 7pm or something around that time due to holiday traffic...
Well we get to Georgia a little bit later than anticipated.. and went straight to the hospital because my mother was in there with antibiotic induced Acute Pancreatitis.. apparently 2% of the population will get that..
Anyways.. we dropped our dog off at a friends house and went to visit my mom..
Then after that we had planned weeks before for all of us to have supper with Randy and Sandy on Friday.. So My father didn't want to come.. So Clint and I went there and had Roasted Lamb with mashed potatoes and corn.. (a favorite of mine).  Then I had to make Stuffoli and a Cheesecake.. and the usual Christmas cookies.. which we did and that went on until late in the night, so We just stayed there...
Then Called my father when we woke up in the morning and he said Christmas was canceled and seemed to be in a bad mood.. which I understand, Since mom was in the hospital..
Well I called my brother.. and we all (my Brother, his wife and myself) decided that it would be nice for him to have some leftovers and a nice home cooked meal while mom was in the hospital.
Well.. I guess that was the wrong decision..
So....................... We had a ham, sweet potato casserole and Green bean casserole...
When I turned the broiler on, to broil the ham... the broiler set the marshmallows on fire and the oven was beeping real loud and flashing F-2.
I'm like "what does F2 mean?".. moral of the story.. F-2 means F-U the oven is on fire...
so, I open the oven and flames are pouring out... i pull the potatoes out of the oven and my father grabbed a spatula and pulled the top layer of charred marshmallows off the top and threw them in the trashcan.. and that went up in flames.. which we used water to get it out...
and that was the beginning of a great meal...
After that.. around 9pm we all headed down to the hospital to see my mother...
Then the 4 of us went to St. Joseph's to the Midnight Mass.  That is the church right next to the hospital.
The Choir was beautiful.. and the Priest really got across his message about What Christmas really is about.. and he welcomed back the people that have been asleep.. and Honored the veterans that were there...
It really was nice.. Plus the priest is the same one that held mass for my Grandfather when he passed away.  I shook his hand after the service and thanked him, I'm sure he didn't remember me from 3 years ago.. but, I thanked him.  His mass was beautiful.
Then we got back to my parent's house.. and woke up.. Dad made some killer Cinnamon pancakes...and I texted my mom, "Merry christmas it's not the same without you... "
so then My cowboy and I headed to my grandmother's house.. and we visited for a while..
Then we left there with intentions of going to the hospital to see my mother.. but, I received a text from her that said " Please don't come I want to rest safe journey home love to you and Clint"
So, I wrote her back.. and we headed back to South Carolina..
by the time we got up to Commerce, Ga.  I called my father to check on my mom, because no one answered her room phone.. and low and behold they were on their way back from the hospital..
no one told me she was getting out...
Well I called my brother and he said he got a text message about it..... moving on..
We get to my ma-in-laws house.. and I start helping her cook.. and her phone rings.. and it's my father.. asking for me..  (I left my phone in the car).  Well he's all upset and asked me if I fought with my grandmother.. I tell him no "we had a pleasant visit". which we did...
and he proceeds to tell me that she was on her way to the hospital because she passed out.
fast forward some time.. I get her on the phone in the ER.. and she told me what happened.. I asked her if she wanted me to come down and she said no.  So I didn't go down..
So Christmas was interesting..
so many things bothered me about people this fine little holiday season...
Here is what I have learned... Two people still think I'm the Antichrist. Got to know some people, I never really talked to and I really enjoyed them... Some people never change.. and I've about had my fill of attitudes, drama and people... I really wouldn't mind celebrating Christmas in my own home and NOT driving all over the country... In fact.. I'd like to just stop celebrating holidays.... Uncomfortable situations and me just don't get along.. and sometimes.. I'd like to just be alone.

On the sixth day of Christmas

This weekend was pretty darn productive..
Friday after work, I made cranberry almond bark and brought it to a Christmas party that we were invited too.. it was a whose who of everyone.. The senator was there and the Agriculture master for the state and all that..
I didn't know it was a fancy party... iffin' I know.. we might have dressed up.. haha..  but, I had on a nice pair of wranglers, a nice belt buckle that had red rubies on it that I won.. and a nice red cardigan for the Christmas season..
Food was great..  they had sauteed dove breasts with cheesy grits.. and Prime rib, and a bunch of fixin's and it was all served on fine china and silver flatware.. I was thoroughly impressed and grateful We got invited.   It says something when you are a Doctor and your husband is a huge Feed producer..and ya'll get invited to a real nice party.. It's the first time you realize you are "arriving".. Not a student in school anymore.. and important people in the community..
I like it.. I like it a lot...

Well.. Saturday, I started messing with that Roan horse.. he's so skittish.. I didn't get on him.. I was a little worried... he's not ready yet..  I've got a lot of de-spooking to do on him before I try to ride his goofy butt..
 I went out to get eggs.. and all my hens are now laying.. so I'm at about 80-90% production rate with them.. I have a bunch.. but, I need a lot for my Christmas Baking adventures...

My Cowboy was finishing up some bush hogging in the smaller pastures.. and he called me to tell me the tractor was out of fuel.. so I drove the dually back there to get him some gas.. and who came running?

When I got back from the pasture, FedEx was outside... they were looking for my package... which they lost... yeah.. LOST... I was about fit to be tied... that is the package with my corvette parts in it... so once they left.. .. I saddled up big Ole Maggie Mae..

Then once I was done with her.. I came back to the house.. Grabbed Sioux.. and Made a sandwhich and grabbed a Mountain Dew and set out to give my hardworking cowboy lunch.

I made up a new routine with these two girls...  first I took Maggie just a Running as fast as she could for as long as she was willing to run across like 180 acres... then she started to give out on me.. so We walked back... then with Sioux, she isn't in as good of shape as Maggie is.. So she just took off running across about 80 acres.. she's such a great horse.. I need to make her my backup horse.. but, she's afraid of barrels.. so we need to work on that haha...

My cowboy finally stopped bush hoggin'.. so We went out to check the wheat field.. and It's absoutely gorgeous..

For supper we had fried pork chops, Mashed potatoes corn and Applesauce.. mmmmmmmmm.. One of my favorite meals.. :)

Now on to Sunday... Sunday morning I went out to check on the girls..

It was time to get to doing our ranch work.. So Maya and I loaded up into the dually with the trailer.. and headed over to the wheat field..
My cowboy got on the back hoe.. and off we went we loaded 63 bales of hay, and while he was stacking the hay.. I decided to wash my corvette... since there was no rain in sight for the next few days..
I washed her.. then waxed her with this compound stuff.. and it took off the old dead paint or something.. anyways.. the good news is... She's is beautiful and shiny and quite possibly the most beautiful Corvette in the world.. haha  I'm bias..
  I even cleaned inside and out..

After my cowboy was done with the hay.. he wanted to go riding, So I got my father's horse out.. and He got Gracie out.. and we took off..  My father's horse and I had a coming to Jesus talk..  He got to bucking.. like good bucking.. not crow hopping..  and we had words.. then we took of running across the pasture and up the hill.. woohooo Pokey ain't so pokey.. that horse was getting it..
and Maya was around and running and having a good time.. and someone was hunting in the national forest (which is behind our property) and Maya took off.. So I took off after Maya one way.. and My cowboy went looking the other way.. and I finally found her sitting on the front porch of the house... she must have thought someone was shooting at her.. hahah So she ducked for cover...
but, On my way back to the house.. I snapped that first pic up at the top of Pokey and I as we were walking on the bank of the pond, you could see the silo at the top.. I thought it was a pretty cool picture..
hmm and  We had ourselves a Fish fry last night with hush puppies :) then I made Oatmeal Cookies.. and then a Candy Cane cheesecake for the girls at the bank :)
and I delivered it to them this morning.. they were much appreciative of it.  I love baking..

Eggs Galore!

After a long spell of NOT getting my Americana eggs.. I have been successfully gathering my hearts galore of eggs every day.. I'm very proud of them, and I'm glad they like their new coop.
When it gets a bit colder, I'll probably go ahead and put out a heat lamp for them, I have it up, just not on yet.
I have names for most of my chickens.. but, I haven't named the newest 6 yet. They were little chicky poo's when I got them.  And they are finally now starting to get personalities. I have one Hen that I call the Rogue chicken.. She's an escape artist. and I have one white americana I call Snow.  I have to name the Roos... Haven't done that yet.. except for the white roo.. I've been calling him Fabio... he's going to be a looker when he gets older..
I need to take some pictures of them.
Last night for supper I made this Creole Green Chili Cream sauce Chicken.. it was awesome. and Totally easy to do...

1 1/4 pounds skinless, boneless chicken breast halves
2 teaspoons Creole or Cajun seasoning
1 tablespoon olive oil
1 can (10 3/4 ounces)  Condensed Cream of Chicken Soup
1/2 cup water
1 can (4.5 ounces) chopped green chiles
1 teaspoon lime juice
1/4 cup sour cream
  • Season the chicken with the Creole seasoning.
  • Heat the oil in a 10-inch skillet over medium-high heat.  Add the chicken and cook until well browned on both sides.
  • Stir the soup, water, chiles and lime juice in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes or until the chicken is cooked through.
  • Stir in the sour cream and cook until the mixture is hot and bubbling.
 So make that for supper tonight :)
I've decided that there needs to be more hours in the day.. I want to ride my horses.. but, I just can't during the week.  I miss waking up, going to school (undergrad) then going to the barn and riding Romeo, then going to work.. go to sleep and repeat.. I did that for many many years..
Now I just work every day.. and the days are short due to the winter season...
But, Saturday we are going to practice with the horses and I'm going to try out a new set of guns I got for competition..

My Cowboy and I have been dueling it out with with Wii sports package.. haha 
I don't like the baseball game.. but, I am rocking at tennis, bowling and boxing...
Golf.... not so much.. we golfed the 9 hole thingy... I had like 27mph winds and I drove the ball.. and it just went off the flipping cliff and I was out of bounds..
I hate golf anyways... I couldn't play that in real life.. but, put put.. I might be able to put put my big butt around that course.. haha
My pig has been limping.. My cowboy said that I have made him too fat... I feed him good junk..
Like that.. that's pumpkin.. it's a squash.. should be healthy for him...
Unlike the pumpkin Gnocchi I ate until my hearts content :)
I need to make some bread tonight.. but Hammy is our garbage disposal..

I'm going to make some Almond cranberry bark tomorrow and bring it to this Christmas party we were invited too. You can't go empty handed when you get invited... it's bad manners..  so I'll make chocolate :) gives me a reason to just *have* to try some ;)

yotes need killin'

Well.. dahlings.. this weekend was not so eventful.. We were supposed to go to Virginia for a competition.. but, that was ousted by the fact we had a sick calf..
I thought I was going to be missing it.. until I pulled up the temperature up there.. and it was like 18... I quickly remembered how much it sucked to be cold down to the bone...
So, we drove to the other side of South Carolina to talk to a man about a horse... not really.. but, seriously.. we have a horse for sale and to make a long stupid story short (too late) the horse is at her house, because the trainer that knows what she is doing with the said horse, trains at this ladies barn... whew..
Anywaaaaaays... the lady made us drive like almost two hours to get over there.. for her to tell us Oh HOW GREAT her kid is..
man I HATE that... i hate people that brag on their kids and how great of riders they are.. blah blah blah...
who cares.. I don't.. well.. she went on and on for like 45 minutes.. and come to find out.. her husband wasn't in town.. and the moral of the story was.. her fabulous daughter was qualified to ride this horse.... YAAAAAAAAAAAY... I forgot to bake brownies and bring her a soda for the occasion.. so I looked around and tried to check out so I didn't say something nasty to the gloating parent.... she wants to get together for dinner to talk about this horse... RETARDED. *ahem*... freaking people I tell you what....
Then after I wasted about an hour of my life I will never get back.. I decided it was about time to go.. so I  nonchalantly looked at the sun.. and was using my skills I learned in NAM.. Nam was hell by the well..
and I said.. "well we must be off.. it is about 5:30" and hot dog I was right! hahahah.. So the lady was all shocked and said "oh do you have somewhere to go" I was all "why yes, yes we do"... even if we didn't anywhere would be greater than there...
So we headed further to the other side of the state to Walhalla and met up with two dear old friends of my Cowboy's. We met them at apparently the only restaurant there, which was mexican.. and we stayed there pretty late.. then they suggested we stay at their cabin.. and boy oh boy was it peaceful.. the river outside the windows.. and the cabin was built on an old gristmill foundation... I mean it was awesome..We stayed up pretty late having great conversation with good friends.. and I got super tired... I slept so peacefully.. woke up with the sound of water.. ahhhhh I love rivers..
We left early so we could tend to the animals.. But we did stop by a flea market.. and we found "milky the cow" it's a cow toy... and it's cool as crap.. I totally would have wanted one of these when i was a kid.  it drinks water and milk comes out it's udders.. ahahah,  Priceless..
So we worked around the ranch the rest of that day... then Sunday.. we got the cows up.. and caught the one straggler we missed, got her tagged and vaccinated and went back to the house to work on a place to park the tractor trailer... and like 3 hours later.. we go back out there to the catchpen.. I seen a bunch of vulchers and stuff  and what did my cowboy spot in the field? a dead something or another...
we walk out there to it.. and I'll be dog gone.. it was a 6 pointer... Coyotes took it down..
I would post a picture of it.. but, I know those left wing animal right people would be on my butt about animal cruelty or some crap and then report me to google.. and them being the people pleasing sympathizers they are... delete my blog and all my hard work that went into it... and that being said.. I think we found a new calling.... annihilation...  annihilation of yotes...I'm just glad it wasn't a calf.. but, a bit Pee Oed about the fact that was a deer I could have shot and ate... Right now.. I could have fresh jerky curing in the dehydrator... or a Venison meatloaf baking in the oven... mmmmmmm meatloaf..
ok I went off track.. oh speaking of the track of food..
My friend told me not to name the cows I was going to eat.. and I said i totally already named them..
"Well I named ben... and he head butted me.. So I told him he was no longer Sir ben of newberry.. he was now sir T-bone of my dinner plate... "
and that being said.. I have a patient to tend to...

Episode 3... Pumpkin Gnocchi

Pumpkin gnocchi

8 ounces pumpkin, halved and seeded
1 baking potato, baked and cooled
2-1/2 cups unbleached all-purpose flour, plus flour for dusting
1 teaspoon salt
1 egg, beaten
Cream Sauce:
2 cups heavy cream
1 cup rich chicken stock
1/4 cup Aceto Balsamico di Modena (balsamic vinegar)

Preheat the oven to 375 degrees F. Line a baking sheet with parchment

Place the pumpkin cut-side down on the prepared pan and bake for 25 to
30 minutes, or until soft and lightly browned.
Let cool, scoop out the flesh, and put It through a ricer or food mill
into a bowl. Scoop out the baked potato flesh and put it through a ricer
or food mill into the same bowl with the pumpkin.

In a large bowl, combine the 2-1/2 cups flour and the salt. Make a well
in the center of the flour and add the pumpkin-potato mixture and egg.
Work into the flour by hand until the mixture can be formed into a ball.
On a lightly floured surface, knead the mixture for 5 to 8 minutes, or
until soft and smooth.

Divide the dough into 4 pieces, and using the palms of your hands, roll
each piece into a sausage shape about 1/2 inch in diameter. Cut into
1-inch lengths. Dust lightly with flour and press against the rules of a
fork while making a small indentation with your finger on the other
side. Set aside on a lightly floured surface until ready to cook.

In a medium saucepan, combine the cream, chicken stock, and aceto
balsamico. Simmer over medium heat for 4 to 5 minutes, or until
completely heated through.

In a large pot of salted boiling water, cook the gnocchi for 3 to 5
minutes, or until tender but still slightly firm. Drain, toss with the
cream sauce, and serve immediately.

Long Day

I got my Vette back yet again yesterday.. the door latch was broken ya know.. so I had to take it to the body shop to get the door taken apart and fixed...
Well... I get there bright and early in the morning to pick her up... and I said was it hard to fix? the fella says.. "no, just sprayed a bunch of lubricant in there and she started working"...
I'm like.. no way... well I felt like a looser.. if it was that easy...
oh well, at least he didn't charge me for it :)
I swear.. I could fix junk that went wrong with my truck.. but, this car.. I have no idea about it..
anyways.. I had a busy night here at the clinic.. and when I was done with my last patient I finally got to my phone and had a message from my cowboy "black calf is down, I need help" well I called.. he didn't answer so I headed home, and he called me back and said the calf is sick and he's got him up at the house.. so I said I was on my way...
When I got home, I changed my clothes and got the B vitamin complex out and sulfur boluses and went to work on the poor little fella.. gave him a shot and a few boluses.. and hung out with him for a while..
then it was around 7:30pm, and we were hungry so I was all ready to go cook, and my husband says to me.. "I'd really like some of that whitemire chinese food".. Well alllllllllllright..
So we got in the Vette and headed out towards the chinese restaurant.. we ate and chit chatted and then headed back home.. and on the way home we got stopped at a "safety check point".  the cop asks for his license and then went back and checked the license plate.  So two portly cops are standing there  and one says to the other "i'd love to have that" well Clint says "yeah you two keep working for the whitmire police department and let me know how that works out" and so the cop that had Clint's license says "here you are" and hands back the license..
Clint took of.. I was like.. "oh my god that was funny".. Then we got home and relaxed a bit... and watched some crap on Viking wildlife on animal planet..  it was pretty interesting.. but, then after that was over..
it was some other show about the hunters in Greenland.. the tv host guy was asking this hunter where he got his pants.. and the hunter goes "it's polar bear I killed it"..  and the tv guy says "where did you get these" pointing to his boots.. they hunter goes" Reindeer, I killed that too" hahahah.. those people are hard core up there..
then I started to fall asleep right before they killed a seal.. so I don't remember what else went on..
That's about all on the ranch front over here..

Cow Kicked

This weekend.. we built a new cattle chute and put up a head gate and all for the cows...
Then worked them.. Wormed them all, vaccinated, ear tagged and banded some of the bull calves...
poor little babies..
But, after we got the cows caught up in the catch pen.. I saw that we had a new baby :) one of the herefords had a baby!!!  a little Red bull calf.. he was so cute..
Now onto the real business... here is how I got cow kicked.. Well My Cowboy was working the head gate and I was pushing them into the chute..
I get about 4 of the calves in the alleyway.. and I go to close them off.. and one of the little baldy suckers pulled his little hoof up towards his stomach.. and BAM right out at me... little joker thought he was funny... until I ear tagged him..
He's lucky he was a steer.. or else I would have banded him and laughed,... Kicked me right in the hand..
I kinda need my hand.. It's not bruised and I didn't break anything so it's all fine and good.. but, still made me mad... And we don't hit them with the cattle prod either..

Oh well.... We had a good day none-the-less.. One of those productive days where you go.. "man we got a lot accomplished"
Then Sunday, We cooked a big breakfast.. venison sausage, eggs, biscuits and venison sausage gravy.. and boy oh boy we threw down at the breakfast table..
Then we ran to the grocery store to do the shopping for the week.. and came back home.. Gotta get stuff done early it was all done by 10am..
Then My cowboy went out to feed the cows and check on them.. and I went to re-arranging the house..
After yesterday I kept finding myself looking up to find Vegas and see what he's getting into.. I just got to thinking I needed to change things in the house.. Therefore; I threw out my red fancy couch and love seat.. I've had them for over 10 years.. and the dogs were just sleeping on them.. and it got to the point that the love seat reminded me of vegas and the couch reminded me of Max for years... I keep looking at them half expecting and half wanting to see him looking up at me like I was waking him up...  So I got rid of that.. and made that little sitting room into my sewing room and library.. I moved all the bookshelves in there and the sewing machine and table.. so it looks different and I like the way it came out...
right after lunch.. around 2, My cowboy calls me up screaming about coyotes were stalking the babies..
apparently the newborn baby and our little baldy baby.. we got him when he was just weaned off his Momma.. so he's gotta be about 9 weeks old.. so he's still small and a little fur ball.. he looks like a teddy bear.. was laying in the sun.. and the coyote was stalking them..So Clint scared him off...
Then My cowboy comes back to the house and get his gun.. and goes back out there to dump the couches in the burn pile and what do you know.. Coyote is back... not for long..

and that was about the extent of our weekend... at dark.. we had supper and then wrapped the Christmas presents to get them out of the way.. watched the pale rider, and went to sleep..

New Chicky Poo Cafe'

I really didn't feel like getting out of bed this morning..
and I kinda dragged my butt to work...
The door handle on the corvette isn't working so good.. So I'm going to run by a body shop on the way home and see if it's a quick fix or not.
I'm going to re-arrange my house today when I get home.. or at least I think...
I am also going to make Pumpkin Gnocchi and bake the pumpkin seeds for my cowboy.

My father caught the rogue hen today! and he threw her in the coop with the rest of them..
I'm going to let the roosters out for good today.. There is no sense in feed the roosters laying crumbles if they ain't laying.. so I'll get them some scratch feed.
I guess that is about it..
If I feel up to it I'll make a video on how to make the pasta..

great friends and family

I haven't felt like talking much.. and I'm here today... Monday my best friend Mel surprised me at work. She came in just before lunch.. She drove over 200 miles to see me.. I ran up to her and just hugged her neck and started crying up a storm. She made me so happy just showing up. she knew her best shittin' friend was hurting.. so she came to rescue me..
we went for "messican" just for old time sakes..
and she sat at my office with me until closing time..
and My father showed up around 5pm.. I was really glad to see him as well.... and I will tell you what..between them and Clint it really lifted my spirits up.
I am blessed to have a great friend and loving family.
Leaving work on Monday would have been really hard.. but, I had plenty to occupy my mind.. and Mel didn't let me stop to think..
We had 15 bean soup for supper and then she told me I was going to get in the "Crimmus" spirit.. so she demanded we put up the Christmas Tree... Which we did, Then she suggested we bake cookies.. and we made like 5 dozen peanut butter cookies.. and half way through baking them.. I had the idea to add chocolate chips...
mmmmmmmmmmmmhmmmmmmmmmmmm.. they were good..
And my father brought me up "Santa's White Christmas" ice cream... now that stuff is heavenly..  it's publix brand.. but, it's awesome..
so I made a peanut butter cookie ice cream sandwich...
 And that was that.. :)
Then Tuesday morning.. we all headed to work.. My father started building another room in my office for me and Mel helped me with patients and answered the phones and such.. Then we went on a shopping adventure to Fred's.. haha.. We got Christmas items for the office.. which is now decorated for the season. She left around 3 to head back to her side of Georgia..

Going home yesterday got to be kinda hard.. because my father and I were talking about Max, he was our other doberman, he died 3 years ago today. And I was talking about Romeo and how I still think about that horse everyday.. and I love Maggie, but she's still not Romeo... and started crying again..
but, I sucked it up and headed to the kitchen immediately..

I made Kale and Cod... Portuguese Style..
  • 1 tablespoon extra-virgin olive oil
  • 1/3 pound Spanish style chorizo, casing removed and diced or crumbled
  • 1 medium onion, chopped
  • 2 large cloves garlic, chopped
  • 1 small bundle of  kale, thinly sliced
  • A few grates nutmeg
  • Salt and freshly ground black pepper
  • 1 cup chicken stock
  • 1 (8-ounce) can tomato sauce
  • 1 (15-ounce) can diced tomatoes or fire roasted diced tomatoes
  • 1 (15-ounce) can garbanzo beans, rinsed and drained
  • A couple sprigs fresh thyme, leaves chopped
  • 4  thick pieces cod  fillets
  • Old Bay
  • Chopped flat-leaf parsley, for garnish
Heat the extra-virgin olive oil over medium-high heat in a high-sided skillet or Dutch oven. Add the chorizo and render for a couple of minutes, then add the onions and cook until softened, about 5 minutes. Stir in the garlic and cook for 1 to 2 minutes. Add the kale and toss to wilt, then season with a few grates of nutmeg and salt and pepper, to taste. Stir in the stock, tomato sauce, diced tomatoes, garbanzo beans and thyme. Bring to a simmer and cook over low heat for 10 minutes. Cool and store for a make-ahead meal.

Reheat sauce, covered, in high-sided skillet over medium heat, stirring occasionally, until sauce is hot and bubbly, about 10 to 15 minutes. Season the fish with seafood seasoning or paprika and salt and pepper, to taste. Add the fish to the sauce and cover. Cook until the fish is opaque and cooked through, about 5 to 7 minutes. Ladle into shallow bowls garnished with parsley.

it was very very good.. Then My Cowboy brought in the first of the holiday gifts... and we all tore that up.. and sat around the tables telling stories of Max, Vegas and Bailey.. All of our buddies that have passed.
The three of us had a  great supper and laughed at the memories we had of our dogs...
This morning was hard... I went in the bathroom after turning off the alarm clock.. and Maya came busting through the door.. she made me so sad, but at the same time she was so happy I was awake I just loved all over her..

I've had some moments today.. but, I'm staying busy..

The silence of a falling star....

Friday, my heart was broken.. Friday night we got home and I let the dogs out.. Maya came back but Vegas didn't.. I called and called for him.. And he never came.. When Clint came in, I said was Vegas with you? He said no he say him running around and he asked me what the loud bang noise he heard was.. I had no idea.. Well I started screaming for Vegas and it is not like him not to come home..  Shortly after I was going nuts looking for him.. A lady and her husband pulled into the driveway and I really don't remember what was said.. And I started screaming and found him lying next to the road.. The lady kept saying I'm so sorry.. I'm so sorry.... I couldn't tell you what she looked like if I saw her... All I knew was that my baby was dead... Clint picked him up and carried him back to the house and put him on the back of the truck and we just stood there petting him and I was begging for god to let him wake up.. But I saw him eyes and they were empty... I fell apart at my seems.. And still don't think I am completely sewed back up.. Clint told me to go take a shower so I did and I just waited for Vegas to pull the curtain back and check on me.. Him waiting on the Matt next to the bath tub.... Leaning up against me when I was brushing my hair.. Him steeling my slippers... Nothing.. Just emptiness.. I didn't sleep at all that night.. I watch Roseanne and the nanny on tvland until the sun came up and Clint woke up.. I had uncontrollably cried all night.. And part of me was afraid to wake up in the morning.. Because the highlight of my morning was when Vegas would wake me up by puttin his head on the bed and wagging his little nub of a tail.. An then when I didn't move he'd put one paw on the bed and then he other and he would crawled up next to me and I would love on him and snuggle with him.. Then him and maya would go out and they would come back in and Vegas would get in my closet and grab my clothes after I took them out of the closet..   When I used to go to the bathroom he would open te door and the door would slam and he'd come in and make me pet him.. And I'd say "vegas get out of here" and he'd lay his head on my knee and wag his nub of a tail and I'd pet him.. I miss him  Slamming against the door to go outside when I would be opening the door.. He acted like I never opened it fast enough..  I missed him dearly when I went to feed the chickens.. He was my buddy he went everywhere. And if I didn't know he was around he used to run by and grab my hand... When I used to wash the dishes e used to. Sneak up behind me and nip me on the butt and make me scream... He was such a part of my life I can't even explain.. My cowboy has been very here for me and very loving and supportive.. I'm not sure what I would have done of he wasn't here... Today he suggested we build a new chicken coop closer to the house.. So we did and moved moved all my girls up here... I kept staring out to the yard having memories of Vegas running around.. And me running with him and him jumping up and nipping at me and us boxing... I found myself wanting to do the "whistle" that he used to respond to... It's a crushing hole. Feels like someone grabs my lungs and squeezes at times.... We went grocery shopping tonight as well... And I lost it coming home.. It's so hard to come home... He wasn't just a dog.. He had such a personality he was like loosing a person... He was my child...  Maya has been very attached to me.. Like she knows I'm hurting.. Everytime I turn around she's there.. And she has slept with me and peed with me... She's been there for me.. Maya just doesn't have the same personality that Vegas did.. But I still live her and she's the only puppy I have left.... I don't want another dog... Because it won't be him.. I went through this with Romeo.. The next horse I bought just couldn't do anything that Romeo could.. And I never really bonded with him.... I hope that Romeo met Vegas on the other side of the rainbow bridge... And I hope that Vegas knows how much I love him and how deeply I miss him..  I keep waiting for him to jump up with me on the recliner and almost tip it over... And I miss hearing him coming in the bedroom To check on us while we sleep... And this just isn't getting any easier... I can't really talk to anyone because words just don't come out..  I just wish I knew why I had to loose him...  I just. Want to go numb so I can't miss him anymore..  I'm glad the lady stopped... And I don't know why he got out of the fence.. He must have been chasing a rabbit or something he new better... I just wish he woke up.. That he broke something that could have been fixed... Something.. Anything but gone...

My Doberdork

We had a great weekend..
I threw my cowboy his non-surprise birthday party.. had a band and about 45 people attended :) And boy we had a blast!  The next day I had a puny cowboy and father..  We all partied a little much!
That morning.. bright and early I got my Mother in the truck and we headed down to columbia for a girl day.
We saw a movie, then went to bed bath and beyond.. and I spent my 150 dollars worth of gift cards I had left.. and bought these two awesome throw blankets.. they are wooly and warm.. and cozey...
they are sweet tea approved :)
Then from there we went to TJ Max.. and I bought some UN-necessary items... well $38.65 worth...
I got an owl hot coco mug, a really deep baking dish.. and it was mighty unique and decorated I might add.. a teaspoon set.. and these ceramic measuring cups... and finally this cute little cow figurine... so cute my cowboy sarcastically told me "awww so cute you should have just left it on the shelf"... I was like "seriously?" and he said.. "yeah it's not everyday you see a cow with freckles and blue eyes".........well... I brought her to work she's on my desk.. and I like her... I got a thing for cows...
And while we are talking about farm animals.. I'm moving my chicken coops closer to the house.. they are too far away.. and it's a long stretch to put out light for them...
and their production is down.. and I'm not happy about that.. but, it's my fault..
I decided to start waking up about an hour earlier than usual, this way I can clean and do laundry before I go to work.. so I can concentrate on important things at night.. like.. supper and dessert :)

We are having a heat wave here.. It's about 77 here today.. and two days ago it was 40...  I hate when the weather gets like that..
I have a short week though... I'm closing the clinic Thursday-Friday.  I also have to make macaroni and cheese and a desert for thanksgiving at my ma-in-laws house.  So be prepared to see a cooking video on that :) I was going to try to make one about biscuits.. but, I had a house full and dogs were barking.. and it got all messed up.. so I let it go...
I better be getting back to the work thing... so more to come later :)

At last!

Yesterday while I was with a patient.. out of the corner of my eye.. I catch my lil red corvette go zooming by...
I whipped my head around and was like thinking to myself  "say Whaaaaaaaaaaaaaaaaaaaaaaaaaaaaa" I was thinking the mechanic was test driving my car... So I finish with my patient and walk out to the waiting room to find my cowboy grinning like a pig in mud... He picked up my car for me :)
So he took his truck back to the house, and I was supposed to go get him after work so we can come back to town to get his other truck that he left at the mechanic's shop..
Well, let me tell you what...After my patients were seen and I closed up for the day.. I locked up, got into my car.. and started her up.. she started right up.. there was no pumping the gas.... I was thrilled... but, not quite as thrilled as when I pulled out of the driveway and mashed the gas.. she spun out and threw my head back against the seat...  I was grinning ear to ear like a goat in a briar patch...
woooohooooooooooooooooooo my car was running better than it ever has!  The distributor had to be replaced.. and she's firing good now...
So this morning I was starting her up.. and got to revving the engine pretty good.. and she sounds like a race car :) I'm so happy.. hahah..

Oh and yesterday... some poor unsuspecting of-my-attitude-towards-city-people fella tried to rip off our checkbook..  We went to this crappy chinese restaurant, next to wal-mart which equal ghetto.. anyways...

we were sitting next to the door with my back to the window and door.... I gave the checkbook back to my cowboy.. and he put it down in front of him but kinda towards the side of the table...  we finished eating, he got up to use the facilities.. and some (who sounded like a city fella) walks in and says to me.. that guy behind you is trying to get your attention... (I was in a terrible mood yesterday) I glared at him.. I'm thinking to myself.. number 1.. No one on this side of town knows me.. and who cares what man is trying to get my attention... so I'm glaring at him and I colorfully said something to the affect of "I don't care" and he's saying, turn around look at him I lost it.... like came unglued... and the dude walked off to the counter.. and at the table next to me.. was a hispanic fella laughing.. I said "what are you a comedian now?" Then my cowboy walks out of the bathroom..I picked up the check book and we left...

Well I started telling him what happened when we were in the truck... and we were headed to the bank.. I handed him the checkbook and I said.. you left this on the table...

and he said.. "OHHHHHHHHHHHHHHHHH that's what the guy was after"

yeah I had a blonde deer in headlights moment... well duh he was thinking I was a gullible girl sitting there...

Retard... I hope he choked on his eggroll..

After work today... I'm going home to start making all the Hors d'oeuvres for My Cowboy's birthday party tonight... ok.. it ain't fancy.. they are finger foods.. hahaha :) we've got a live band coming and all.. We are going to have a big time..

Corvette Update

Well I can't fix her.. so I opted to have the mechanic tow my baby to his shop..
I'm going to have him figure out whats wrong with the door handle while he has her...
I just dread him getting her.. because he's gonna take SOOOOOOOOOOOOOOOOOO long.. last time, when we were getting her back up and running from sitting for almost 10 years, it took him like 3 weeks to fix her.. but, I will say this.. My office is right next to the shop.... I will annoy them to infinity and back until he's done...  I know I don't have a 67 stingray.. but, this emblem was really nice and classy, so I picked it as the picture for this post.. :)
30 minutes until closing time...
I heard something about my picture in the newspaper... and before you ask, NO I'm not on the jail log...
So I might need to swing by and get me a paper...
I found this out from a 90 year old gentleman that came into my office for Low back pain.  He was in WWII and is a Marine Veteran!

My Cowboy will be at the American Legion Meeting Tonight, So I'll have the kitchen to myself :)
I think I'm going to need to have a video crew.. hahah

Marine Corps Ball!

We headed on down to Parris Island, Saturday afternoon and got us a hotel room, and got all gussied up to attend this special ball.

We got there and had a few cocktails and then sat down for a very nice meal complete with Steak, Potatoes and Green beans..

Then the party started :)
I had a blast, We met the former Assistant Commandant of the marines and there was even a fella there, that got a silver medal from Chesty Puller.
I remember, there was enough idiot oil in that place to drown a village..
And I remember a lot of dancing.. and the best piece of cake I have had.... and I remember the message from the Commandant.. and singing... and then I remember trying to drink like a Marine... Then I remember waking up in bed :)
So.... Good times :)
Now I've seen some patients this morning.. and I had a minute to write a few things..
I'm trying to figure out some finger foods and the such for my Marine's Birthday Party... Making up a shopping list and stuff :)

Eat Beef... The west wasn't won on a salad..

First and Foremost.. Happy Veteran's Day! 

Thank you God for all the men and women who serve you and us in our military. How blessed we are as Americans to live in this country, to be able to worship God and to have so many amazing men and women in our military protecting not only us but so many others in countries so far away from their home and families.

And now onto my rambling lamentations about the veterinary freaks...
Tomorrow is the Marine Corps Ball.. and I was looking to find a place to board my dogs, well..
I call my vet down there in fancy smancy big city Columbia.. and I'm like "hi.... blah blah blah how much?"
So the lady says put them together in a run its 31.60 a night, but we aren't open Sunday.. well ok..
then she said "you know that they have to get the kennel cough vaccine" I said "yeah I know". then she said "and with the outbreaks of canine influenza, the dogs are having to get a mandatory flu vaccine".. I'm like dead silence.. then I said "and how much is this?" she said "well it's a two part vaccine and it runs about 66 dollars a dog."  I was fit to be tied.. and I flipped my lid.. I said "I have never gotten a flue shot in my life, nor am I going to put that crap into my dogs.." (that was the edited version) she was like "I understand." I hung up on the wench... SERIOUSLY? no.. nuh uh...
I doubt I will be going back there if that is how it's going to be...
So then I got all investigative.. and figured.. where do I go to learn about people crap?  CDC...
and here is what they have to say..

How serious is this infection in dogs?
The number of dogs infected with this disease that die is very small. Some dogs have asymptomatic infections (no symptoms), while some have severe infections. Severe illness is characterized by the onset of pneumonia. so.. no... seriously flu shots for my dogs..
what am I going to do with the dogs now? who knows...

Now off the soap box and on to greener grazing pastures...
last night was ladies night at the cattleman's meeting, which means the end of year banquet.. :)
we had steak and a baked potato, with salads...
And all the cattleman brought their women folk.
we ate.. laughed and had a good time..
They had a little cooking show, and found out that they are coming out with new cuts of beef.. 
steaks called santa fe and san antonio, and a few more.. but, I don't remember the names.  Then the guy was grilling up some "petite tenderloins"  kinda reminded me of venison.. very tender though..
then afterwards.. I got me some more bumper stickers that say "eat beef, the west wasn't won on a salad"
and the guy asked a question made me think.. he said "how many nights per week do you eat beef?"  I was thinking.. man.. we have it like 4-5 nights a week and sometimes for lunch.. interesting fact about us..
anyways.. beef is high in folate, zinc, iron and protein... I get to feeling puny if I don't have it in a couple of days.. Oh and my cowboy got himself nominated onto the Newberry Beef Board :) I was all proud of him!
I reckon I better get onto working some...
actually i'm going to play some Wendy's game to get me a t-shirt that says where's the beef...
I'm also thinking about making some short cooking shows..
calling them "sweet tea's southern fried cooking show" :)
Now that I have an apron to wear.. well.. I'm going to have to dazzle this one up.. I have two I made at home..  I love aprons.. I'll make this one all homey and take a picture of it :)

I got back in her as soon as I woke up to try to get her started....
and she wouldn't start....
So I began to sing to her..

Well let me tell you what happened...
I met my cowboy and our friend Eric at the San Jose Messican place to have a happy hour beverage before we went home..  I was be-bopping along down the highway...
getting closer to our ranch.. and I put my turn signal on... and start to turn into the driveway......... *bam*
I'm like what the heck was that... yeah she backfired or something.. then I went to accelerate a little bit... and there was nothing... she just coasted me right up into her parking spot.. and that was that..
So now I start talking to her... like what happened?  so I try to start her up like 10 times... dead... zip.. zilch.. nicht... nothing.... I couldn't even put the lights down...
So I turned her off.. and said.. alright.. we'll fix this in the morning..
And my cowboy pulled up behind me.. and I told him something terrible happened...
he was all concerned until I told him my Vette wouldn't start..  he said "Ahh it'll be alright.."
So we went in the house and I started making..............

Black Bean, Corn and Turkey Chili:

1 tablespoon vegetable oil
1 pound ground turkey
1 large onion, chopped (about 1 cup)
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon dried oregano leaves, crushed
1/2 teaspoon ground black pepper
1/4 teaspoon garlic powder or 1 clove garlic, minced
1 3/4 cups Chicken Broth
1 cup Pace Picante Sauce
1 tablespoon sugar
1 can (about 15 ounces) black beans, rinsed and drained
1 can (15.25 ounces) whole kernel corn, drained
  • Heat the oil in a 4-quart saucepan over medium-high heat. Add the turkey, onion, chili powder, cumin, oregano, black pepper and garlic powder. Cook until the turkey is cooked through, stirring often to separate meat.
  • Stir the broth, picante sauce, sugar, beans and corn in the saucepan and heat to a boil. Reduce the heat to low. Cover and cook for 30 minutes, stirring occasionally.
It was really good... I didn't use the sugar.

and here I am at work... driving the truck.. and It's raining.. and I'm sad...

Crockpot Boiled Peanuts

Using a 6 quart crock pot .
Wash 2 quarts of raw peanuts in the hulls until water is clear.
Add to crockpot and 3 qts hot water and 1/2 c plain salt.
Cook for 6 hrs or 7hrs on high.
Stir occasionally if peanuts are not salty enough add 1/4 c. more salt

I'm feeling like spreading some words of wisdom and all...

I think I'm getting old.. hahah I'm starting to see grey hair and I noticed my first fine line in my face...
Aging gracefully is lovely.. but I believe in kicking and screaming... sotime to start using stronger lancome products.. I used that genifique thingy they had out.. it seemed to do something... They had given me a 7 day trial thingy...
Oh I wear poison perfume, and for the summer I switched to pure poison.. then I decided to go and get some regular Poison, but while I was there.. I found Midnight Poison, so I got the small bottle of that..
and when I got home.. it was the BIG bottle of Regular poison... so I've gotta go back and get midnight poison.. I think that was a gift from the retail gods.. hahah..
Anyways.. I think I'm going to have to start dying my hair... I'm not ready to have white hair...

Things are kicking at my clinic :)
I really like my new table.. the UPS man.. singular.. not 2 ups men.. just 1.. pulls up in this big truck.. and he's getting my table off the trailer.. and i'm like.. I hope there is more than one of you.. well no..
Soooooooooooooooo.. I took my white coat off and rolled up  my sleeves and helped him get it in the door.. which it wouldn't fit, so we had to un-crate it, to get it into the building..
Well we had just got it in, and My cowboy knight in chevy silverado armor showed up. and he helped the guy move it.. the poor fella was like "I didn't know it was this heavy".... hahah
I was checking my numbers this morning... and This week I made my rent for the month :)

I'm excited about the Marine Corps Ball!!!!!!!!!
I'm gonna wear my brown *ahem* excuse me... Truffle dress that I wore on the cruise ship :)

Rhinitis and Sternutation

ok.. I'm sick of sneezing and this running nose I just can't seem to catch..
Continuing on from before.. We are attending the Marine Corps Ball this weekend.. which I'm super stoked about :)
and I'm getting a new examination table today... as soon as UPS freight delivers the darn thing...
One of my patients this morning told me she is making me sour dough bread! Now that is going to be a treat!
I told her I would bring her some pear butter :)
I was nosing around the Opera house web page.. and ordered some tickets..  I got Ricky Skaggs, I LOVE me some Ricky Skaggs...  He was the very first concert I ever saw..  and as long as we have been in this town, we have been seeing him, and everytime he says "I wish I could get a nice biscuit and milk gravy somewhere in town"  well, I'm going to write him a letter... but, I gotta be sure not to sound like a freak or something..
but, I would flip my lid if Ricky Skaggs came over for Breakfast!

and while I was snooping around.. I noticed something called the Highwaymen.  They are three impersonators: Waylon, Willie and Johnny... So I checked their story out on youtube.... they looked pretty good.. and sounded pretty darn close.. so I got those tickets too.. those are for March though.... it's ok.. I'm going to give them to my cowboy as a present :) He Loves his Highwaymen...  I think it will be special to him..
as long as he don't read this before his birthday...
I was planning a surprise birthday party for him. but, one of his marine buddies let the cat out of the bag.. not on purpose.. just because he wrote me a message and my cowboy had my phone.. hahah

OHHH My table is here, I just saw the UPS Tractor pull in the driveway... killer....


This past weekend was packed :)
My parents were up here, and I sure did miss them.  But, Friday my mother and I went shopping around town, I was looking for some more dress pants.. and since we have a VERY big selection of stores here in our little town, Goody's had nothing good.. and Cato's only had 2 pairs of pants in my size, but nothing I really liked.. I'm looking for grey and a few more pairs of black pants...   So that shopping trip was a bust.. but, I bought some cute litte hair doo-dad thingy.. and a new pair of sunglasses. anyways..
Saturday Morning we all woke up and headed out to hunt...
didn't see anything.. :(
so that was a bust too.. but, that's ok.. I'm moving my tree stand...
And Saturday night, we went to see the Elvis impersonators of Elvis impersonators....
The fist half of his show he played a tribute to Country Legends...
and let me tell you what.. that man can imitate him some Conway... and when he came out as elvis... holy crap.. the place went wild :)
He played a lot of old Elvis music.. I thoroughly enjoyed the show :)
Sunday Morning, My cowboy was in the bathroom, and I was still sleeping.. I feel something breathing on my face... and snuggling with me.. then licking my face.. I woke up and saw my doberdork that joker was all curled up cuddling with me.. hahaha... so I got my butt up, let the dogs out and got in the kitchen and started making Biscuits... I mean White flour biscuits.. not the wheat ones I've been making... a pound of bacon and eggs.... and the four of us threw down on breakfast :)
then, my parents started packing up to leave, and I got to making venison jerky.. ( i got those nifty containers as a wedding present, they are air tight..)

I love making jerky, which reminds me i need to get some more spices..
I just like using my Dehydrator :)

Its about time to make some squash chips..
I like to use those rather than potato chips..

Then my friend's boyfriend lives pretty close to us, and his Momma has a pear tree that was just over run with pears..
So he brought me a huge bag of pears..
so I made some pear butter.. and it turned out pretty good. 

After my parents left, my cowboy decided to go use the bush hog down in the far far back pasture.. and I decided to go grocery shopping for the week..  I decided this week, since it's cold and I've gotten the sniffles.. we were eating soups and Stews... So Cowboy Stew, Chili, and Tomato lentil soup is on the menu!
I get to town and my phone rings, My cowboy is stuck, the tractor won't start.. so i had to turn around and bring him the dually to jump the tractor off...  we decided we might need to buy some new batteries for that tractor and the back hoe... then I headed back to the store..
and for supper that night, I called it our last meal, beacuse Monday, we were eating healthy.. haha all protein and low carbs.. that way we can get ready for Thanksgiving...  speaking of which... my parents are going to Florida .. which means... none of my mom's sweet potato caserole, no sausage stuffing, no bake turkey, no manicotti, baked rigitoni.... zip.. zilch.. nothing.. :(  Thanksgiving, just ain't Thanksgiving if it ain't like momma fixed it.. ya know..
anyhow, here is what our last meal looked like...  Roasted Potatoes, Home gorwn Peas and Pork Roast and Gravy :)

Yesterday at lunch, I went and got a new phone.. AT&T has good service.. but, when i'm paying 120 bucks for an iPhone that isn't on the 3G network.. it sucks big time.. so my iPhone 3GS phone was starting to not take a charge.. so, it was time for me to get a new one... so I called up AT&T and asked them about this little 3g problem.... and they weren't updating towers anytime soon.. and this and that... and i had 3 more months left on my contract...  Well I bought out my contract for 80 bucks and went on the family plan with my cowboy.. he's got Verizon.. and I got the new 4G phone :)
It's awesome.. and Viola! verizon has 3G towers in our town.. and the stupid phone has 3G at home....
Seriously AT&T.... and I got to keep my number :)
I'm going to go back to Verizon today and see about an otter box and some crap for it..
it's so small... lol..
And last night when we got home.. I had a big ole' crock-pot full of cowboy stew waiting.. :)

Another Apple Pie!

Tonight we are going out to eat with my husbands family.. Thursday is maw-in-laws birthday..
So we are celebrating it tonight at a expensive restaurant in town here...
Anyways, I crocheted her a scarf and made this lovely caramel apple peanut brittle pie pictured to the right.... now.... this has to be the prettiest pie I have ever made..
I will not have a piece tonight.. between yesterday's Halloween candy and the leftover apple pie from Sunday... I'm over the sweet binge I was on...

This morning dear sweet puppy Vegas, had his first encounter with the shock collar. :)
He likes to heard the cows, usually in the wrong direction, and He LOOOOVEs barking at poor little Hammy the pig.. and another past time favorite of his... is running the horses and biting at their tails trying to land ski.
so first thing this morning we go to feed the horses... and Hammy wasn't around, so strike out on our part for that.... then we had to go check on the 5 head of cattle my cowboy bought yesterday at the cow sale..
and there it was... Vegas took off under the fence running towards this little baldy calf... so my cowboy yelled and shocked him.. all of a sudden you hear BEEEP zzzzzzt YELP!
He went running out of the cow pen like a lightning bolt... and sat down behind the fence...
then we passed by the other horses that are out in the back pasture and here comes Vegas be-bopping along towards Bosco........ he hit him with the collar again and boooooooy he took off running away from the horses, straight back to the house.. by the time we got back to the house, he was sitting on the front porch.. hahahah.. then we get inside.. and he's looking all dejected, and sitting there staring up at me.. I said.. "awwwe vegas what's wrong???" and petted on him a bit...
I think we might have gotten the right training tool... That dog has a strong mind of his own.. that is for sure..
you can beat him.. but it doesn't phase him...
This shock collar hurt his feelings!
Well I better get back to working... Patients are on their way!
