and here we go:
Twas the Eve of Christmas Eve and we were on our way to Georgia.. and we went a different way.. which turned out to be a blessing because 85 was backed up until 7pm or something around that time due to holiday traffic...
Well we get to Georgia a little bit later than anticipated.. and went straight to the hospital because my mother was in there with antibiotic induced Acute Pancreatitis.. apparently 2% of the population will get that..
Anyways.. we dropped our dog off at a friends house and went to visit my mom..
Then after that we had planned weeks before for all of us to have supper with Randy and Sandy on Friday.. So My father didn't want to come.. So Clint and I went there and had Roasted Lamb with mashed potatoes and corn.. (a favorite of mine). Then I had to make Stuffoli and a Cheesecake.. and the usual Christmas cookies.. which we did and that went on until late in the night, so We just stayed there...
Then Called my father when we woke up in the morning and he said Christmas was canceled and seemed to be in a bad mood.. which I understand, Since mom was in the hospital..
Well I called my brother.. and we all (my Brother, his wife and myself) decided that it would be nice for him to have some leftovers and a nice home cooked meal while mom was in the hospital.
Well.. I guess that was the wrong decision..
So....................... We had a ham, sweet potato casserole and Green bean casserole...
When I turned the broiler on, to broil the ham... the broiler set the marshmallows on fire and the oven was beeping real loud and flashing F-2.
I'm like "what does F2 mean?".. moral of the story.. F-2 means F-U the oven is on fire...
so, I open the oven and flames are pouring out... i pull the potatoes out of the oven and my father grabbed a spatula and pulled the top layer of charred marshmallows off the top and threw them in the trashcan.. and that went up in flames.. which we used water to get it out...
and that was the beginning of a great meal...
After that.. around 9pm we all headed down to the hospital to see my mother...
Then the 4 of us went to St. Joseph's to the Midnight Mass. That is the church right next to the hospital.
The Choir was beautiful.. and the Priest really got across his message about What Christmas really is about.. and he welcomed back the people that have been asleep.. and Honored the veterans that were there...
It really was nice.. Plus the priest is the same one that held mass for my Grandfather when he passed away. I shook his hand after the service and thanked him, I'm sure he didn't remember me from 3 years ago.. but, I thanked him. His mass was beautiful.
Then we got back to my parent's house.. and woke up.. Dad made some killer Cinnamon pancakes...and I texted my mom, "Merry christmas it's not the same without you... "
so then My cowboy and I headed to my grandmother's house.. and we visited for a while..
Then we left there with intentions of going to the hospital to see my mother.. but, I received a text from her that said " Please don't come I want to rest safe journey home love to you and Clint"
So, I wrote her back.. and we headed back to South Carolina..
by the time we got up to Commerce, Ga. I called my father to check on my mom, because no one answered her room phone.. and low and behold they were on their way back from the hospital..
no one told me she was getting out...
Well I called my brother and he said he got a text message about it..... moving on..
We get to my ma-in-laws house.. and I start helping her cook.. and her phone rings.. and it's my father.. asking for me.. (I left my phone in the car). Well he's all upset and asked me if I fought with my grandmother.. I tell him no "we had a pleasant visit". which we did...
and he proceeds to tell me that she was on her way to the hospital because she passed out.
fast forward some time.. I get her on the phone in the ER.. and she told me what happened.. I asked her if she wanted me to come down and she said no. So I didn't go down..
So Christmas was interesting..
so many things bothered me about people this fine little holiday season...
Here is what I have learned... Two people still think I'm the Antichrist. Got to know some people, I never really talked to and I really enjoyed them... Some people never change.. and I've about had my fill of attitudes, drama and people... I really wouldn't mind celebrating Christmas in my own home and NOT driving all over the country... In fact.. I'd like to just stop celebrating holidays.... Uncomfortable situations and me just don't get along.. and sometimes.. I'd like to just be alone.

Friday after work, I made cranberry almond bark and brought it to a Christmas party that we were invited too.. it was a whose who of everyone.. The senator was there and the Agriculture master for the state and all that..
I didn't know it was a fancy party... iffin' I know.. we might have dressed up.. haha.. but, I had on a nice pair of wranglers, a nice belt buckle that had red rubies on it that I won.. and a nice red cardigan for the Christmas season..
Food was great.. they had sauteed dove breasts with cheesy grits.. and Prime rib, and a bunch of fixin's and it was all served on fine china and silver flatware.. I was thoroughly impressed and grateful We got invited. It says something when you are a Doctor and your husband is a huge Feed producer..and ya'll get invited to a real nice party.. It's the first time you realize you are "arriving".. Not a student in school anymore.. and important people in the community..
I like it.. I like it a lot...
Well.. Saturday, I started messing with that Roan horse.. he's so skittish.. I didn't get on him.. I was a little worried... he's not ready yet.. I've got a lot of de-spooking to do on him before I try to ride his goofy butt..
I went out to get eggs.. and all my hens are now laying.. so I'm at about 80-90% production rate with them.. I have a bunch.. but, I need a lot for my Christmas Baking adventures...

My Cowboy was finishing up some bush hogging in the smaller pastures.. and he called me to tell me the tractor was out of fuel.. so I drove the dually back there to get him some gas.. and who came running?
The WHOLE herd of cows came..
When I got back from the pasture, FedEx was outside... they were looking for my package... which they lost... yeah.. LOST... I was about fit to be tied... that is the package with my corvette parts in it... so once they left.. .. I saddled up big Ole Maggie Mae..

Then once I was done with her.. I came back to the house.. Grabbed Sioux.. and Made a sandwhich and grabbed a Mountain Dew and set out to give my hardworking cowboy lunch.

I made up a new routine with these two girls... first I took Maggie just a Running as fast as she could for as long as she was willing to run across like 180 acres... then she started to give out on me.. so We walked back... then with Sioux, she isn't in as good of shape as Maggie is.. So she just took off running across about 80 acres.. she's such a great horse.. I need to make her my backup horse.. but, she's afraid of barrels.. so we need to work on that haha...
My cowboy finally stopped bush hoggin'.. so We went out to check the wheat field.. and It's absoutely gorgeous..

It was time to get to doing our ranch work.. So Maya and I loaded up into the dually with the trailer.. and headed over to the wheat field..
My cowboy got on the back hoe.. and off we went we loaded 63 bales of hay, and while he was stacking the hay.. I decided to wash my corvette... since there was no rain in sight for the next few days..
I washed her.. then waxed her with this compound stuff.. and it took off the old dead paint or something.. anyways.. the good news is... She's is beautiful and shiny and quite possibly the most beautiful Corvette in the world.. haha I'm bias..
I even cleaned inside and out..
and Maya was around and running and having a good time.. and someone was hunting in the national forest (which is behind our property) and Maya took off.. So I took off after Maya one way.. and My cowboy went looking the other way.. and I finally found her sitting on the front porch of the house... she must have thought someone was shooting at her.. hahah So she ducked for cover...
but, On my way back to the house.. I snapped that first pic up at the top of Pokey and I as we were walking on the bank of the pond, you could see the silo at the top.. I thought it was a pretty cool picture..
hmm and We had ourselves a Fish fry last night with hush puppies :) then I made Oatmeal Cookies.. and then a Candy Cane cheesecake for the girls at the bank :)
and I delivered it to them this morning.. they were much appreciative of it. I love baking..

When it gets a bit colder, I'll probably go ahead and put out a heat lamp for them, I have it up, just not on yet.
I have names for most of my chickens.. but, I haven't named the newest 6 yet. They were little chicky poo's when I got them. And they are finally now starting to get personalities. I have one Hen that I call the Rogue chicken.. She's an escape artist. and I have one white americana I call Snow. I have to name the Roos... Haven't done that yet.. except for the white roo.. I've been calling him Fabio... he's going to be a looker when he gets older..
I need to take some pictures of them.
Last night for supper I made this Creole Green Chili Cream sauce Chicken.. it was awesome. and Totally easy to do...
1 1/4 pounds skinless, boneless chicken breast halves
2 teaspoons Creole or Cajun seasoning
1 tablespoon olive oil
1 can (10 3/4 ounces) Condensed Cream of Chicken Soup
1/2 cup water
1 can (4.5 ounces) chopped green chiles
1 teaspoon lime juice
1/4 cup sour cream
- Season the chicken with the Creole seasoning.
- Heat the oil in a 10-inch skillet over medium-high heat. Add the chicken and cook until well browned on both sides.
- Stir the soup, water, chiles and lime juice in the skillet and heat to a boil. Reduce the heat to low. Cook for 5 minutes or until the chicken is cooked through.
- Stir in the sour cream and cook until the mixture is hot and bubbling.
I've decided that there needs to be more hours in the day.. I want to ride my horses.. but, I just can't during the week. I miss waking up, going to school (undergrad) then going to the barn and riding Romeo, then going to work.. go to sleep and repeat.. I did that for many many years..
Now I just work every day.. and the days are short due to the winter season...
But, Saturday we are going to practice with the horses and I'm going to try out a new set of guns I got for competition..
My Cowboy and I have been dueling it out with with Wii sports package.. haha
I don't like the baseball game.. but, I am rocking at tennis, bowling and boxing...
Golf.... not so much.. we golfed the 9 hole thingy... I had like 27mph winds and I drove the ball.. and it just went off the flipping cliff and I was out of bounds..
I hate golf anyways... I couldn't play that in real life.. but, put put.. I might be able to put put my big butt around that course.. haha
Like that.. that's pumpkin.. it's a squash.. should be healthy for him...
Unlike the pumpkin Gnocchi I ate until my hearts content :)
I need to make some bread tonight.. but Hammy is our garbage disposal..
I'm going to make some Almond cranberry bark tomorrow and bring it to this Christmas party we were invited too. You can't go empty handed when you get invited... it's bad manners.. so I'll make chocolate :) gives me a reason to just *have* to try some ;)

I thought I was going to be missing it.. until I pulled up the temperature up there.. and it was like 18... I quickly remembered how much it sucked to be cold down to the bone...
So, we drove to the other side of South Carolina to talk to a man about a horse... not really.. but, seriously.. we have a horse for sale and to make a long stupid story short (too late) the horse is at her house, because the trainer that knows what she is doing with the said horse, trains at this ladies barn... whew..
Anywaaaaaays... the lady made us drive like almost two hours to get over there.. for her to tell us Oh HOW GREAT her kid is..
man I HATE that... i hate people that brag on their kids and how great of riders they are.. blah blah blah...
who cares.. I don't.. well.. she went on and on for like 45 minutes.. and come to find out.. her husband wasn't in town.. and the moral of the story was.. her fabulous daughter was qualified to ride this horse.... YAAAAAAAAAAAY... I forgot to bake brownies and bring her a soda for the occasion.. so I looked around and tried to check out so I didn't say something nasty to the gloating parent.... she wants to get together for dinner to talk about this horse... RETARDED. *ahem*... freaking people I tell you what....
Then after I wasted about an hour of my life I will never get back.. I decided it was about time to go.. so I nonchalantly looked at the sun.. and was using my skills I learned in NAM.. Nam was hell by the well..
and I said.. "well we must be off.. it is about 5:30" and hot dog I was right! hahahah.. So the lady was all shocked and said "oh do you have somewhere to go" I was all "why yes, yes we do"... even if we didn't anywhere would be greater than there...
So we headed further to the other side of the state to Walhalla and met up with two dear old friends of my Cowboy's. We met them at apparently the only restaurant there, which was mexican.. and we stayed there pretty late.. then they suggested we stay at their cabin.. and boy oh boy was it peaceful.. the river outside the windows.. and the cabin was built on an old gristmill foundation... I mean it was awesome..We stayed up pretty late having great conversation with good friends.. and I got super tired... I slept so peacefully.. woke up with the sound of water.. ahhhhh I love rivers..
We left early so we could tend to the animals.. But we did stop by a flea market.. and we found "milky the cow" it's a cow toy... and it's cool as crap.. I totally would have wanted one of these when i was a kid. it drinks water and milk comes out it's udders.. ahahah, Priceless..
So we worked around the ranch the rest of that day... then Sunday.. we got the cows up.. and caught the one straggler we missed, got her tagged and vaccinated and went back to the house to work on a place to park the tractor trailer... and like 3 hours later.. we go back out there to the catchpen.. I seen a bunch of vulchers and stuff and what did my cowboy spot in the field? a dead something or another...
we walk out there to it.. and I'll be dog gone.. it was a 6 pointer... Coyotes took it down..
I would post a picture of it.. but, I know those left wing animal right people would be on my butt about animal cruelty or some crap and then report me to google.. and them being the people pleasing sympathizers they are... delete my blog and all my hard work that went into it... and that being said.. I think we found a new calling.... annihilation... annihilation of yotes...I'm just glad it wasn't a calf.. but, a bit Pee Oed about the fact that was a deer I could have shot and ate... Right now.. I could have fresh jerky curing in the dehydrator... or a Venison meatloaf baking in the oven... mmmmmmm meatloaf..
ok I went off track.. oh speaking of the track of food..
My friend told me not to name the cows I was going to eat.. and I said i totally already named them..
"Well I named ben... and he head butted me.. So I told him he was no longer Sir ben of newberry.. he was now sir T-bone of my dinner plate... "
and that being said.. I have a patient to tend to...

8 ounces pumpkin, halved and seeded
1 baking potato, baked and cooled
2-1/2 cups unbleached all-purpose flour, plus flour for dusting
1 teaspoon salt
1 egg, beaten
2 cups heavy cream
1 cup rich chicken stock
1/4 cup Aceto Balsamico di Modena (balsamic vinegar)
Preheat the oven to 375 degrees F. Line a baking sheet with parchment
Place the pumpkin cut-side down on the prepared pan and bake for 25 to
30 minutes, or until soft and lightly browned.
Let cool, scoop out the flesh, and put It through a ricer or food mill
into a bowl. Scoop out the baked potato flesh and put it through a ricer
or food mill into the same bowl with the pumpkin.
In a large bowl, combine the 2-1/2 cups flour and the salt. Make a well
in the center of the flour and add the pumpkin-potato mixture and egg.
Work into the flour by hand until the mixture can be formed into a ball.
On a lightly floured surface, knead the mixture for 5 to 8 minutes, or
until soft and smooth.
Divide the dough into 4 pieces, and using the palms of your hands, roll
each piece into a sausage shape about 1/2 inch in diameter. Cut into
1-inch lengths. Dust lightly with flour and press against the rules of a
fork while making a small indentation with your finger on the other
side. Set aside on a lightly floured surface until ready to cook.
In a medium saucepan, combine the cream, chicken stock, and aceto
balsamico. Simmer over medium heat for 4 to 5 minutes, or until
completely heated through.
In a large pot of salted boiling water, cook the gnocchi for 3 to 5
minutes, or until tender but still slightly firm. Drain, toss with the
cream sauce, and serve immediately.

|Christmas in Dixie|
Well... I get there bright and early in the morning to pick her up... and I said was it hard to fix? the fella says.. "no, just sprayed a bunch of lubricant in there and she started working"...
I'm like.. no way... well I felt like a looser.. if it was that easy...
oh well, at least he didn't charge me for it :)
I swear.. I could fix junk that went wrong with my truck.. but, this car.. I have no idea about it..
anyways.. I had a busy night here at the clinic.. and when I was done with my last patient I finally got to my phone and had a message from my cowboy "black calf is down, I need help" well I called.. he didn't answer so I headed home, and he called me back and said the calf is sick and he's got him up at the house.. so I said I was on my way...
When I got home, I changed my clothes and got the B vitamin complex out and sulfur boluses and went to work on the poor little fella.. gave him a shot and a few boluses.. and hung out with him for a while..
then it was around 7:30pm, and we were hungry so I was all ready to go cook, and my husband says to me.. "I'd really like some of that whitemire chinese food".. Well alllllllllllright..
So we got in the Vette and headed out towards the chinese restaurant.. we ate and chit chatted and then headed back home.. and on the way home we got stopped at a "safety check point". the cop asks for his license and then went back and checked the license plate. So two portly cops are standing there and one says to the other "i'd love to have that" well Clint says "yeah you two keep working for the whitmire police department and let me know how that works out" and so the cop that had Clint's license says "here you are" and hands back the license..
Clint took of.. I was like.. "oh my god that was funny".. Then we got home and relaxed a bit... and watched some crap on Viking wildlife on animal planet.. it was pretty interesting.. but, then after that was over..
it was some other show about the hunters in Greenland.. the tv host guy was asking this hunter where he got his pants.. and the hunter goes "it's polar bear I killed it".. and the tv guy says "where did you get these" pointing to his boots.. they hunter goes" Reindeer, I killed that too" hahahah.. those people are hard core up there..
then I started to fall asleep right before they killed a seal.. so I don't remember what else went on..
That's about all on the ranch front over here..

Then worked them.. Wormed them all, vaccinated, ear tagged and banded some of the bull calves...
poor little babies..
But, after we got the cows caught up in the catch pen.. I saw that we had a new baby :) one of the herefords had a baby!!! a little Red bull calf.. he was so cute..
Now onto the real business... here is how I got cow kicked.. Well My Cowboy was working the head gate and I was pushing them into the chute..
I get about 4 of the calves in the alleyway.. and I go to close them off.. and one of the little baldy suckers pulled his little hoof up towards his stomach.. and BAM right out at me... little joker thought he was funny... until I ear tagged him..
He's lucky he was a steer.. or else I would have banded him and laughed,... Kicked me right in the hand..
I kinda need my hand.. It's not bruised and I didn't break anything so it's all fine and good.. but, still made me mad... And we don't hit them with the cattle prod either..

Then Sunday, We cooked a big breakfast.. venison sausage, eggs, biscuits and venison sausage gravy.. and boy oh boy we threw down at the breakfast table..
Then we ran to the grocery store to do the shopping for the week.. and came back home.. Gotta get stuff done early it was all done by 10am..
Then My cowboy went out to feed the cows and check on them.. and I went to re-arranging the house..
After yesterday I kept finding myself looking up to find Vegas and see what he's getting into.. I just got to thinking I needed to change things in the house.. Therefore; I threw out my red fancy couch and love seat.. I've had them for over 10 years.. and the dogs were just sleeping on them.. and it got to the point that the love seat reminded me of vegas and the couch reminded me of Max for years... I keep looking at them half expecting and half wanting to see him looking up at me like I was waking him up... So I got rid of that.. and made that little sitting room into my sewing room and library.. I moved all the bookshelves in there and the sewing machine and table.. so it looks different and I like the way it came out...
apparently the newborn baby and our little baldy baby.. we got him when he was just weaned off his Momma.. so he's gotta be about 9 weeks old.. so he's still small and a little fur ball.. he looks like a teddy bear.. was laying in the sun.. and the coyote was stalking them..So Clint scared him off...
Then My cowboy comes back to the house and get his gun.. and goes back out there to dump the couches in the burn pile and what do you know.. Coyote is back... not for long..

and that was about the extent of our weekend... at dark.. we had supper and then wrapped the Christmas presents to get them out of the way.. watched the pale rider, and went to sleep..

and I kinda dragged my butt to work...
The door handle on the corvette isn't working so good.. So I'm going to run by a body shop on the way home and see if it's a quick fix or not.
I'm going to re-arrange my house today when I get home.. or at least I think...
I am also going to make Pumpkin Gnocchi and bake the pumpkin seeds for my cowboy.

My father caught the rogue hen today! and he threw her in the coop with the rest of them..
I'm going to let the roosters out for good today.. There is no sense in feed the roosters laying crumbles if they ain't laying.. so I'll get them some scratch feed.
I guess that is about it..
If I feel up to it I'll make a video on how to make the pasta..
