A Great Winter snowstorm Surprise!

So Tuesday, they closed the schools and sent everyone home....  It wasn't snowing or icing yet... so, we opened the office and waited for the snow to come.. While waiting for the snow, my Uncle from NYC was driving back to New York and got caught in the blizzard.. so he stopped at my parents house and then surprised me by visiting me at the clinic!!
I was so excited to see him, I haven't seen him in about 6 years...
SOOOOO, about an hour later it started snowing, so we called our patients that were left, and explained to them that we were closing for the weather, and called the ones for Wednesday and rescheduled them incase the storm was as bad as it was supposed to be...
My Cowboy came to pick me up at work, and we all went back to my parents house for chili...
Then my uncle and I got to talking.. and we decided he should stay the next day... so we made Pizza Dough.. after a long line of begging and pleading done on my part... He agreed to give me the family recipe... NOT before I swore on my life.. that I would never give it out....
So we made it together..

We stayed at my parents house until about almost 2 in the morning.. and went home through the snow....

I dreamed of Pizza all night long.. and bread and pastries.. It was a fattening dream...  But, I awoke bright and early to run outside and see that.... It didn't snow as hard as I thought it would, but, Still there was snow on the ground.. and I was wondering if I had to go to work.. when I watched a tractor trailer slide down the road past my house... then I grinned.. because I knew... I had a snow day.. and even better than that.... a snow day filled with baking and family...  :)

So, about 9 I roll up to my parents house...  I left my house at 8..... and they live 5 miles away....
the road was about pure ice... I slid a few times on the way there.. but I was driving about 30mph... 
I came across one of the sheriff's I knew, stopped for him and he told me that the hill I was about to go down was all ice... so I went down the middle of the road like 5mph.. and then back up the hill and came to another Officer I knew and he told me the road was closed ahead and that I needed to go around.. but, I was so close to my parents street.. I told him that's where I was going and he let me through,  I passed by a jack knifed tractor trailer and checked out the damage.. and rolled up onto my parents street...  that's why it took about an hour to get there....  As I got to my parents house, my dad was leaving because he got a fire call to go out to the end of his street and assist.... he took my truck up there...

but enough for that side story.... When I got there, for one of the first times in my life.. I showed my uncle how to do something in the kitchen..  I made biscuits...  and we had that for brunch with eggs and sausage.. and then started on making bread.. bread that needs to rise for 18 hours before you bake it..

I had a in detail crash course in gluten, yeast interactions with sugar and textures of dough and all things of the culinary greatness of baking bread....  and then we decided to head to Columbia to try to get fresh mozzarella and saparito tomatoes, olives and all other things we needed to make Pizza...

we made it down there, the Highways weren't bad.. and they finally came and sanded the roads.. so we were pretty much in the clear there...

We got back and it was a pizza Frenzy..

After another long night, I awoke bright and early to get my parents by 8am, To finish the bread!
We put the bread in the oven.. and 50 minutes later. we had warm Rye bread.. waiting to be cut into...
and OHHH MY GOD... you have no idea what the hell this stuff tasted like..
the crust was thick and crunchy.. and the texture was off the chain...

Then I was supervised as I made my favorite Raisin bread... with a twist.. We added pecans to it.. and I was left with explicit directions on how to make it in 18 hours...

I woke up this morning at 5:48 to start on this bread.... and about 7am.. My cowboy woke up to the smell of baking fresh Cinnamon Raisin Pecan bread....
and this is my first "old world" style bread I have ever made...   My uncle learned in Italy...
and here is what we had for breakfast.. :)

There's no business like Horse Business

Friday I had some clients to see at the Augusta Cutting Horse futurity....  So, My cowboy and I loaded up and went down to Georgia. we walked around and checked out the vendors..  My Cowboy got himself a new hat.. a nice one at that.. 20x Black Gold stetson.. very very nice...
I got a saddle pad that I wanted to buy but, it was 129 online.. I found it mis marked for 69.99, so I immediately snatched that right up..  Ragner will be please when he gets to wear it...
It has been 3 weeks since I have ridden any of my horses.... the weather has just sucked, and I know I have been saying that.. but, it's not that I'm complaining.. I'm just over the weather.. :)
Well, While we were down there, we went to the Stallion Breeding auction.... and well, I was compelled to bid on this one horse.. and it went for $7500.. can you believe that??
anyways, we got two different horses.... One is a pepto horse and the other is a doc a lena.... so, We are breeding Paula and Charly to them..
then Saturday, we got up and I had to go to Clemson, for the Barrel Racing Futurity... and we spent some time there.. It was Freezing.. and the wind was blowing like big hard long bursts.. it was horribly cold out...
So then after that.. we went back home.. and hunkered down for the night...
Bright and Early Sunday, we got up and found that the horse trough had sprung a leak and we had no water pressure in the house... it wasn't that bad of a thing to fix.. but a hassle none-the-less..

Then we started raking up leaves and burning them,  and waiting on a load of firewood to get delivered...
So I decided to let Charlie out so he could stretch his legs.. and boy oh boy did he...

then, we stacked firewood and about night fall, we headed in for the night.  I made Gumbo and Watched old movies.. like the Cowboy way!

Rough weekend, But Rollo made it!

this was one of those weekends..
it was cold, rainy, windy, wet... just crappy weather.. I'm so sick of the mud...  I'm ok with the cold as long as the arctic winds aren't blowing with it...  sheesh...
well, I refused to fix fences this weekend.. and my dear Dad came to help.... but, I cleaned out the chicken coop and swept and got things situated around the house... then about 5p.m.  I hear a 4-wheeler come zooming up to the feed barn, get a bag of feed and stop at the gate to the yard..  It was my cowboy.. he needed help getting a cow...
let me explain that.. we had so much fence down from all the rain and wind that trees knocked down bordering fences and cows were out in the national forest....  that don't make me a happy camper..

well..  I get way out in the left corner of our property.. and it's all cedar trees...  and My Father, Cowboy and I are chasing this stupid cow on foot.. trying to get her to go through the darn gate... Finally  we pushed her through at the river crossing...
Then that night, I decided I wanted Mexican food.. and off to the mexican restaurant we went.. to where I ate the HOTTEST Camarones al la Diabla I have ever eaten in my life....
It was seriously almost too hot for me to eat... It tasted awesome though... and it was a slow burn... my whole face was red and smoke was about coming out of my ears... It's rare that I can find something too hot like that for me :)  I was happy about it...
The next day we woke up and went to church.. then I wanted to just get in the Vette and drive in some direction somewhere.....  but, that didn't happen.. there was chores to be done... so we gave about 10 bales of hay to the cows, 5 to the horses and 5 to the broodmares out in the back..
what mud is around this place... the pastures are muddy sloppy messes.... the Arena is like a foot and a half of mud... can't get the tractor in there to work the dirt.. nothing...  I'll stop griping about the mud... it could be worse.. it could be snow..... just saying....

Rollo is a happy puppy.. he's figured out to hang out in the kitchen and give me puppy eyes to get scraps from cooking.. :)
He's gonna be in heaven today when I go home and make jerky.  I made potato chips and zucchini chips yesterday.. he wasn't to fond of the zucchini.. but, Maya love fresh vegetables...  and Zeus, not so much..   But they like them after they have been dehydrated..

I'm going to gripe one more time about Medicare... we haven't gotten any payments from them in a few weeks.. and we were figuring since they are always behind... and Christmas.. and all that crap.. so
Saturday night.. I get a email from them..

really.. that's all the letter said... so Monday.. we are trying to figure out what was going on.. and what is it? OHHHHHHHH it's some sort of Holiday.... freaking seriously...  so Tuesday.. My assistant gets through to them after 45 minutes of automated b.s..... to find out.. that they finally submitted my EFT paper.. from December 16, 2011.... they did it on December 23, 2013.......  after which my original local bank was bought out by a chain and they changed all the routing numbers, etc.. I got pissed at the bank and went with a big bank since they don't do crap like that to you.....  So after figuring that mess out.. we had to send off a 3 page letter with bank crap attached.. and wait who knows how long until we get paid... to which they said they didn't know how long it was going to take and weren't going to send paper checks in the mail anymore.....

In other news... a few other doctors in the town aren't accepting Medicare anymore... imagine that...

I'm ready for spring.. and flowers and birds chirping in the mornings... and the warm sun...

I'm really praying for decent weather next weekend for the Chili cook off...

Plus two

We headed off to Lynchburg to get Clint's puppy and we left a little late on Friday, so we went through bad storms most of the way,  we decided to get a hotel in Knoxville and we ate at the Longhorns that was on that exit. we nosed up to the bar because there was a 30 minute wait. The bartender came over and asked us what we would like and we told him jack on the rocks... the guy told us they were out of jack....... I said "what? this is Tennessee how can you be out of Jack"? they guy said they didn't have an extra bottle.. so Then.. I asked about Gentleman's Jack.. and they had that....  While we were there, we met a nice couple at the bar,  we had about a 30 minute wait.  But they owned a wrecker service and had harley's so we chatted with them for a while.  After that we headed back to the hotel and got up bright and early the next day, had a hot continental breakfast and headed off to Lynchburg.
Once we got to Lynchburg, we got Clint's Puppy.. Trigger, who was bred by some friends of ours that we rodeo with..
We hung around with them for a while, then we were going to go into Nashville, to see one of my oldest friends we went to High school together.

So Darren and Clint went off to the horses and I followed Dianne into her puppy house.. and was looking around.. and saw a puppy that was 1/4 of the size of the rest of the litter.. and so I enquired about that puppy and she explained they weren't sure if he was going to make it, because he had hydroencephalitis and if he made it through the next week... he'd be ok...

So I picked him up and started trying to get to know him...
which lead to me asking Clint if I could take this puppy home.. so After I got him and Darren drunk in Nashville, he said ok.. haha...

So the next morning, we woke up, and headed to town with Darren to pick up a horse trailer, and I took the little fella with me....   I was real torn about this... I didn't need another dog... and I didn't need a puppy that may or may not live... but, I felt so horrible about him NOT being all pampered and spoiled while he was alive.... anyway.... she gave me the puppy....

He's been coming to work with me and following me all around the office.. and greeting people.. then he gets tired and goes to sleep under my desk and pulls my jacket down to the floor so he can lay on it while I'm with patients... I explained that if someone doesn't want to see a puppy in the office they could leave...

Yesterday after my clinic hours.. I had some horses to go work on.  So I went down to that barn and worked on a horse... then my Cowboy called me and told me to meet him at the bar....
So, I loaded up into the truck and we headed towards Bubba's....
I had taken the puppies with me, so they were not home alone....  I brought them in and told the owner that I was bringing my kids in.. and we all wanted chili dogs and doritos!

Oops Tulsa time!

I forgot to mention something about Christmas..

We are currently headed to Lynchburg, Tennessee. And no we are not going to hold up the jack Daniels distillery haha we are headed to get a mini Aussie puppy from our friends.. Well we are listening to willies roadhouse on the xm radio.. And the song Tulsa time came on and I was singing along until the chorus and I busted out laughing. Remembering while I was at my mother-in-laws house on Christmas.. We were engulfed in a lengthily prayer.. See my brother-in-law is a preacher.. And he was praying before we opened presents... And I'll admit my mind was wandering and I was thinking about other things.. But abruptly during the silence of prayer I was startled by my cell phone singing "living on Tulsa time" I silenced a bad word that wanted to slip out and I fumbled through my jacket pocket to grab my phone and put it on vibrate... Then I started laughing, laughing that really hard keeping it in laugh where if anyone was looking at you through the window they would think you were convulsing right there on the spot... And the more I tried to stop laughing the more I laughed harder.. Oh man it was bad...  And that's the end of my story :)

12 degrees

Holy crap I woke up and it was 12 degrees outside..

Last night, the temperature dropped about 20 degrees in 3 hours... we had crab stew for supper, one of my Mennonite patients brought it to me..  and it sure was good.. this is soup and stew weather...
we are having chicken and dumplings tonight.  it's left over from Sunday..
I made the chicken and dumplings in the crock pot though...


Crock Pot Chicken and Dumplings


  • 4 Chicken Breasts (boneless, skinless chopped up)
  • 2 Tablespoons Butter
  • 1 Can Cream of Chicken Soup
  • 1 Can Cream of Celery Soup
  • 3 1/2 Cups Chicken Broth
  • 1 Onion, finely diced
  • 1 Cup Celery, diced
  • 1 Cup Carrots, diced
  • 2 Chicken bouillon cubes
  • Biscuit dough..

  • Now you can make some, use bisquick or a can of biscuits from the store,,

Directions:
put all ingredients in, then cover and cook on LOW for 8 hours.

About 20-30 minutes before serving, break up the biscuits, put in dollops of the bisquick or homemade biscuit mixture.

and serve it up.. :)

First UFC move and a Frozen Weekend

Friday night, we went out to this bar that our friend was playing at..  He was in a band and decided that the band would get back together and have a performance.  so we show up and they were playing.. and people were watching the Clemson game..

well this drunk mexican.. seriously.. like didn't speak good english at all comes up and body slams me at the bar.... so I in return pushed him as hard as I could and he fell on the floor.. then got back up.. and it didn't take much to push him he was weeby wobbling as it was...
then.. he got up in my face and asked me why I did it.. and I exclaimed to him.. "oh my GOD! did you see that guy run by?!?!?!"  and he look really perplexed and went to walk away then I guess figured out I was messing with him and turned around and went for my face.. So I went to kick him and take him to the ground.. but had to settle for the Shin shot....  I sooooo wanted to get him on the floor and spur him.... but, he got kicked out instead....
So after one very satisfying waffle house trip at 2am.. we went home... and went to sleep...
bright and early at 6am. I woke up.. bright eyed and bushy tailed ready to go shoot on Ragnar..
My cowboy wasn't too fond of getting up and going outside.  But I hooked up the trailer and got the horses loaded and off we were to the competition...
now, I had put on ski silks, 2 shirts and 2 pairs of pants, with wool socks.. and I was still freezing...
so I had to add hand warmers into my boots and then one for my nose.. and two in the pockets of my car hart... Holy crap it was cold... but, by God I was GOING to shoot off that horse if it was the last thing I did... and OH My My MY that horse is a beast!


A few people told me I was giggling the whole time riding him... and I didn't think I was actually giggling.. but, once I saw these pictures this morning.. I said.. uh huh.. I was giggling... look at the smile on my face..
the first stage was pretty darn good... that horse turned that run down barrel and I couldn't shoot as fast as that joker was running....  but by the 4th stage I had this all worked out.. and even some of the steering issues I was having.. I got the tie down all set and the rein length... it was all a learning experience... and he is FUN to ride.. I just can't explain... you can feel him when he turns a barrel.. he just explodes like coming out of the racing box.... I t-totally love this horse and I'm so looking forward to us learning each other and becoming a solid unit like Maggie and I were... :)

tonight it is supposed to get down to 12 degrees.. and a high of 28.... so, we are all going to be cold and frozen tomorrow!

Wrapping up the end of the year.

This Picture above was Christmas Day...   Morning to be exact, at my parents house, where we had breakfast and opened presents..  I'll start at Christmas because nothing out of the ordinary happened, especially after the invitation for worlds :)

Before, we went to my parents house for Christmas morning, we exchanged gifts... I got some new Victoria's secret pajamas and a big kick butt cephalon knife set and two pictures of Maggie and I from worlds...  I was extremely surprised and happy :)

Then we headed for my parents house where we had eggs, sausage and Gingerbread Pancakes... mmmmmhmmm.. those jokers were good..

after we ate breakfast, we opened presents.  I got some killer new sheets and an ELF ON A SHELF!!!!!!



If I would have had an Elf for Christmas when I was a kid.. I would have had a whole lot of fun with that..

In fact next year I'm going to have a ton of fun doing crazy things with him.. hahah


Then, we went back home and headed for my maw-in-laws house for Christmas dinner over there..

We got back pretty late, but, we went to sleep and in the morning, I was free to do what I wanted.. which was a bunch of nothing...  
I took down the Christmas tree and packed up everything pertaining to christmas and decided to move some stuff around and clean..  getting ready for the New Year..

Friday, My friend and I went down to Aiken to go trail riding..
this place was awesome, they have a steeple chase track, a sand 1 mile race track and all these jumps randomly throughout the trails..

then when we were going into the woods there was a sign that said the hounds will be in the woods Saturdays at 9am and Tuesdays at 1:30pm... I was excited..  I haven't fox hunted in a LONG time...  I need to bring Kismet down to those trails and see how she does in the woods.. then go to a fox hunt..

Now, I took Ragnarok (Streakature) there, because of the race track...   which is where we headed straight too.  
I took off just cantering.. and I passed my friend... then I kicked and kicked and kicked and this horse was just running.. he ran so fast my eyes were watering... it was awesome.. I think I might have missed my calling as a jokey....

then we left the track and went onto the trails, we found some quick sand with a sign that says "danger quick sand after heavy rain" well, no heavy rain there... at my house... yes.. but a couple of hours down the road, it was dry....  so we crossed the quick sand... my friend and her horse went first.. then Ragnar and I.... and right before the end... Ragnar just laid out in the sand.. I screamed like a little girl because he startled me... my friend turned around and she was like.. what the hell.... I started laughing and kicking my horse telling him to get up.. the joker was going to roll with me...  we laughed pretty hard for a while after that..  I couldn't believe him...  I really love this horses personality..  

But, when we got back to town, I got my horse loaded on my trailer and we headed home, and when I got there.. there was this big box that said perishable sitting on my table...   So, I open it.. and what is in there...... Lobsters.. from Maine... they were alive.. looking at me with those cute little eyes and moving their little legs around....  They were a Christmas Present from my friend Sandy in Georgia...
I'm staring at these little critters.... and just the other day.. I had made lobster tail.. and it was fine and good.. but, It wasn't attached to the cute little thing when I cooked it....
So, I got out a big stock pot and filled it up with water and got it boiling... I was totally having a girl moment trying to kill these lobsters...  I had heard they scream when you boil them.....
So I called my mom.. and I told her what was in front of me... and she explained to me that when she was a youngun'  she used to be up at her grandparents house in Maine and they would catch the lobsters then take them home and cook them and they would scream.... that didn't make me want to kill them...  but I sucked it up... threw them in the boiling pot while I held my eyes closed real hard.. because for some reason.. that would have made me not hear the screams... but.... after I dropped the last one in the boiling water I threw the lid on... and tried not to listen.. but, it dawned on me that they didn't scream.. so I opened one eye and looked at the pot.. then the other eye.... and I was confused... so I called my mom back.. and explained how I threw them in there and they didn't scream.... she said hmm and I said hmmm and we hung up..... but, we had an awesome supper..  I made a Butter Roux and got out nut cracker thingies.. they look like crab crackers hahah...  and we had a good ole meal :) Lobster, Steamed Broccoli and Saffron Rice..

Since I've been on vacation since 12pm on Christmas Eve, most of these days are blending together... haha...  
So since we are talking about food.. I'll stay on the food subject.. The parks and recreation people called me and wanted me to participate in the first chili cook off... So I said sure, and the lady told me we needed a football theme, since it is Super Bowl weekend.. and it had to be healthy chili... meaning made with Turkey.. I was all excited because I have a kick butt turkey chili recipe!  and My assistant I decided that we will go with Texas as our state... then she explained that her husband would be pissed if we went with the Dallas Cowboys... so, I went home and told my cowboy and he put us hot on the trail of the Houston, Texans.. haha.  So we are calling ourselves the Lonestar Ladies.. and  we got ourselves some Texans shirts, and aprons.. then we will decorate with the Texas flag and stuff... It's going to be great :)

Oh, and I went to a supermarket like 45 minutes away from me.. and they had Lamb... so Monday night, we had lamb chops and I made Ratatouille.. which I had never made before... let me tell you what.. it's a lot of work...  but, the Ratatouille has thyme in it....  so I made a paste for the Lamb out of dukes mayo, about 2 cloves of garlic minced, some of the fresh thyme and some rosemary... then pasted it on the lamb, crushed up some ritz (like 4 of them) and spread that on top of the paste.... then baked them for 20 minutes...
 It was good.... real good.. I have been craving lamb for like 2 weeks now... and I haven't been able to get any in the stores around here..

Sunday, we went to my mother-in-laws house.. but, we had to get up at 6am so we could go to church with her..then had a big early lunch... and we got back late, then went to my parents house, my mom made chicken and veggies...  then that night, we both were so tired form staying up the night before until about 2am.. watching the UFC fight.... which brings me to another thought bubble popping up in my head.... HOLY CRAP the UFC fight was amazing... I was watching the girls fight.. and I got to thinking while we were driving sunday.... I really need to take kickboxing and judo lessons.... 
I might have also missed my calling as a cage fighter.....  and I think i'm going to make it a new years resolution that I'm totally going to find somewhere to take kickboxing...
ok detour over... back on track...  well, sunday... really monday morning.. Zeus woke me up puking.... I heard him dry heaving, to which i come to.. to see him throwing up my skivvies.. so, after cleaning that up I was awake... wide awake... and didn't get back to sleep until 6am.. when it was time to get back up.. then I had to go to the office to finish the obamacare bs.... and that lasted until I had to go back yesterday... and I was there until 5pm finishing it all up... and now I gotta go back to work for real tomorrow...  :(  I want a longer vacation... but, alas.. my patients need me....
Last night was fun...  We went to our friends house and had a beaufort stew... I had no idea what that was until I saw it..... It's a low country boil... I guess it's a south carolina thing to call it a beaufort stew... but, we watch the ball drop and then hung out for a little while longer and I drove us home... to where I t-totally crashed... I didn't wake up until about 10:30am....  we got to sleep about 2:30-3am.....
I woke up to the smell of bacon and zeus was all snuggled up with me... I rolled over and went back to sleep... I have no idea what time that was.. but, I woke up about 10:30.. and I was still groggy... 
I did put a ham in the crockpot with coca-cola.... cut up my collards, washed the black eyed peas that I had soaked over night... and got everything ready to go...  after shooting some skeet and completely falling in love with my dad's Winchester 870tb shotgun.  I made Cornbread and, we all sat down to a mighty good meal...  Collards for luck, black eyed peas for wealth and ham for who knows what.. and the cornbread just for the collards :)  we had a great meal.. and a great way to start the New year...
I have a good feeling about 2014... the past few I haven't had good feelings about... I hope this one is great for everyone..

Sioux's baby is getting really big... I've named her Clover (since the whole false pregnancy thing.. and My cowboy has named her Fluke)

picked up a cute wine cork holder.... I have put the wine corks from out anniversaries in there.. and some random ones...  As, we have anniversaries I'll take out non-anniversary wine corks and replace them... then one day it will be all special wine corks :)
