Weekend Not as Planned, Sicilian Couscous Recipe



I went to the store I despise.. Wal-mart.. and I needed to get some dumbbell weights..   and I was trying to take the path of least resistance though that stupid store.. and there was some people blocking the main aisle, so I ducked down another..  my whole objective when I go into wal-mart is get in, get what I need.. and get the hell out....  and I turned the corner to find this display of something called a Yonana... well it stopped me dead in my tracks and my brain started turning thinking bout the little stickers that are on my bananas recently... so I stopped to gander.. and decided I was taking to long.. and my first instinct was to buy it.. so I grabbed it and headed back to the door.. Took that joker home.. and froze a banana...
Then realized I should have peeled the banana before I froze it.... ..  But, I got it peeled....
and put it through this machine.. and out came banana goodness.....   holy crap it's like home made frozen yogurt.....  I like it a lot...

This past weekend, Rollo and I were supposed to meet My Cowboy in Pennsylvania...  My dad dropped Rollo and I off at the airport..  to catch our 6:48 flight to DC, then we had a 10:08 connecting flight to State College, PA.   I get a little notice on my phone that the plane was 10 minutes delayed.. I'm like no problem.. then all of a sudden I hear them announce that the plane is 3 hours late now...  So I got up to the ticket counter.. and wait in line with the rest of the people... this poor fella spend about 45 minutes with me trying to figure out how to get me to Pennsylvania...  to find out that the 3 hour delayed plane was then canceled.. I have no idea why... so I got a full refund and called my father to come pick me back up...
I was so disappointed in this little adventure.. or lack there of adventure... I called my cowboy and explained what had happened to him and that was that.. It was too late for me to drive up there because it is a 12 hour drive.. so, I just went back to the kennel picked up Zeus and Maya and we all went home...

More Rollo

Lamb, Couscous and garlic bread.

Satuday, I managed to put up new closet doors in the bedroom... with a lot of help from my dad... the closet doors fell on me for the last time Saturday...   then I bought a cherry tree, 2 gala apple trees and a bunch of azalea bushes.. and some little white picket fencing..
I was going to get that all done on Saturday but,  I had a little horse emergency...  Pokey, My dad's horse, got caught up in some barbed wire... apparently there was some knock down drag out fight between the stallion and diego (2 separate pastures) and they tore down the fence, and also they tore down the corral panels in the catch pen... well back to pokey... he cut up his legs real bad in the barbed wire, so I called the vet out, and while we were waiting for him, I went to check the fences.. and found out where the fight was... and found Maggie and Paula on the other side of the fence with the brood mares... I was shocked the girls took her in so quick...  but, I'm happy she's out there...  I guess she's really taking the broodmare thing I told her to heart.. haha...
The vet came and told us it wasn't as bad as it looked...  and gave me some antibiotics to give him.. so I've been cleaning and applying wound stuff to him.. he's walking pretty good today.. but, he said it was going to take a little while for it to get to feeling better...

So, then I went to my parents house and cooked my Mom some Lamb... it's one of her favorites.. and she's not been feeling so well lately.. so I went over there and did that  :)

I made a new concoction out of Couscous...

Sicilian Couscous:

10 ounces Couscous
15 ounce can artichoke hearts, chopped
1 cup slivered almonds
1 cup sun dried tomatoes
1 cup fresh grated locatelli cheese
1/4 cup Italian salad dressing of choice
Salt and pepper to taste
Directions:
1. Cook couscous. Toss to fluff and chill until cooled.
2. Add rest of ingredients, stirring to combine 


Then Made chocolate chip cookies and dad made a cheese danish.. haha.. we were living high on the hog that night :)

Then Sunday, I got up went to church with my dad, and then came back home and took to digging holes... planted all the trees and all but two of the azaleas... I couldn't get the holes dug.. the ground was so darn hard..  I had to get help with those.. hah

Catch up and Tunica

Soaking Ragnar's foot...
Ragnar has an Abscess and I wasn't able to take him to tunica...  I was going to take Nutter Butter... who is a brother to our stallion, but not as big as him.. and was just broke to ride the past 60 days-ish....

Now Nutter butter is named his name because he's a bit of a flighty nut case but he rides like butter...
as in.. he's cold backed as hell... it's a fight to get the saddle on him, but, he's like buttah when you ride him.. haha.. I really like this little fella..

I got some bee hives....  I guess I'm a queen bee now!!  hahah..

Checked on the cows the day before Ragnar had an abscess..

so this was all before Tunica...

I came home from work Tuesday night about 7:40 and my Cowboy told me he wanted to leave for Tunica tonight... and I said ok.. so I hurried up and packed my shit up.. I put maggie on the trailer... not before she stomped and smashed my darn toe....  Clint said that Maggie was thinking... "if you want to ride another horse you can walk like him too"  and off we went...
we had to stop off at a truck stop and spent the night in the semi...
then headed back to tunica... 
we had to stop twice because we were blowing engine oil all over the truck and trailer... and they found out that it was a lose cap on some gear box...
so we made it to tunica...
the next day.. I was brushing maggie explaining how sorry I was that she was here.. and the skunk head butted me in the nose... I went flying out of the stall backwards.. I thought that she broke my nose.. I was fuming....
Well, then comes the first stage... I thought I was going to hit the dirt..  because I finished the stage with no stirrups...  that was the roughest ride I had ever taken on her...So she screwed me out of the nationals the first day...
Then the next day....  Maggie about come unglued in the middle of the arena...so  much for being scared the day before.. I was praying I didn't come off at that moment....  and I lost a stirrup in her crow hopping that I wound up spurring her because I was trying to Hang on... ugh..
So I scratched the match.. and left meanie in the stall...

I set up shop in the aisle way and helped people and their horses.. :)

we drove back Easter Sunday...
and got back around 7pm-ish...

Rescues

Well, I said not much has been going on.. but,  the local aspca called us and wanted to know if we would rescue 2 donkeys.. and like always.. you show up and there is other stuff involved..
so.. we have 2 donkey's and 1 Henny...

The Donkey's are cute.. one is one of those jesus donkey's and one just looks like the donkey from Juan Valdez Coffee commercials... so I've been calling him Juan.. haha..
they are pitiful looking.. and their feet are horrible..
the Jesus donkey.. whom I might call jesus "hey zeus".. just to stick with the hispanic tone...  is going to stay.. his feet were so bad, my cowboy wasn't sure we'd be able to fix them... so the farrier came out today.. and he said we could do it.. so I called the vet to come cut him... (geld him) and then the farrier is going to cut his feet while he's down for the count..  we tried today but it didn't work...

I really like Juan... but him and Jesus are going to hang out with the cows and protect them from coyotes when we have them all healed up and feeling better...

The Jenny now... he has to go... he's lunged at me and the horses as we walk by the corral pen we have him in... that's just not good or safe.. I'm about to try to move him...

I came home and found my name in the Rundown Magazine :)


I was excited to see that...

and then I made up some stuff for dinner.. I put some asparagus in tin foil.. drizzled them with olive oil and squeezed a whole lemon on them... covered them with some garlic and pepper seasoning.. then put them on the grill.... took them off and tosses some goat cheese on top... it was very good..

Breeding Season

Well, Gracie still hasn't had her baby...
She's into her 3 weeks overdue stage now.. but. she was really overdue with her last baby..

We let the stallion out with the band broodmares...  they seem to be getting along fine..

Now, the Stallion is named "Cocaine"  his registered name is IC hancocknsmokinblu
since he is hancock and blue valentine cross.... all the mares are either hancock, blue valentine or blueberry.

March/April will be an awesome experience next year....  We have a weekend off before we are going to Nationals.... I'm excited to spend the time with Ragnar...   
Nothing to new and exciting has been going on.. but y'all will be the first to know!

brief synopsis

so much has been going on it's hard to even know where to begin..
Maggie and I finished 3rd at Worlds... and I can't even describe how proud of my horse I am..
and she's 13 now,  and she's retired, and bred to my stallion... so I'm anxiously awaiting a baby from her...  we ended on a note that not many people in the world end on.. there are a lot of people out there chasing those AQHA trophies.. and I got one my first time going....
I cried like a baby a few times thanking Maggie.. and I was trying to hold back tears as I was getting my award..

and it's hard getting off a horse that i've been with for so long...
I have my new boy Ragnar... but I'll tell you going from an amateur horse to a open horse is a big jump.. I had to grow a pair to ride this horse fast.. and he still makes me think.. OH SHIT I"M GONNA DIE.. but, it's exciting.. and I trust him..

I have been super busy at work.. which is a blessing... and the weather finally broke.. so we are finally able to be out later at night and do some things after work.. and I've been able to ride more.. which is awesome..
Still waiting on Gracie to have her baby.. I bought a book called blessed are the broodmares... it's all about foaling and babies... so I'm anxious to read that book...

This weekend we are going to a regional match in georgia.. then we have a week off.. and then it's Nationals time.. :)
I so do hope I can be competitive on my new horse.. we seem to be getting along great at the slower speed.... I sped him up this week... so I hope I'm man enough for this job.. haha
we shall see this weekend..

and I got 18 americana eggs in the incubator. :)
