Canine Diabetes

Well,  I took Maya to the Vet this morning, because Sunday it dawned on me, she was drinking a lot.... so I started thinking about her symptoms, and she's been thirsty, suffering from incontinence and loosing weight.
I thought the weight was because she started running at night with me in the pastures while I was riding.
But, all the signs were leading to Diabetes...
So they took her blood sugar today and it was 436.. which is really high.  So tomorrow I go to pick up syringes and insulin....  Poor little Maya...
They did a blood panel on her and her levels were fine, so no kidney failure and all that.. Just Diabetes..
She's got the Big D and I don't mean Dallas!

Thursday, I got some real bad news from a friend of mine.. that she was having some cramps, and she's pregnant...
So, her mother and herself went to the doctor, and then she wound up being admitted to the hospital.. and Friday Morning she lost her baby at 22 weeks and 4 days.
I feel so horrible for her....
So yesterday she was released to come home, and I don't know what to do for her.. so I did the only thing I know to do... feed her and her husband..
so I made them a JalapeƱo chicken tortilla casserole and pumpkin spice muffins with carmel and nuts..


But, my brother did come to visit me this weekend :)
I made him meatloaf, pumpkin lattes and Pumpkin scones.. and we threw down.. I also took him to the bar down the street to shoot some pool, and we had a great time until the college crowd came in, and we decided to boogie back to the house, so we sat on the front porch sipping pumpkin lattes and talking..

And late last night, My cowboy finally came home from Texas... I sure was glad to see him..
Today is another drizzly dreary day...  and that was about the end of my weekend...
I cut the grass and cleaned up getting ready for fall, covered the grill up and burned some trash.. things like that..  that was about it..

Wednesday..Woden's Day

I came home to find a bird.... that my cat decided she wanted to bring me...
and Holy smokes it was a cardinal...
she was pretty distressed, so I set her up in the Laundry room and gave her some sunflower seeds and water.. and bread.. and decided I'd let her relax.. while I went and got her a cage so she could be safe from the cat.. and when she grew her tail feathers back, I'd let her back out into the wild...
I need another wild bird like I need a hole in my head. but, I was prepared to keep her if she couldn't get back in the swing of things..
I didn't put her with Jay.. because I remember Jay Birds are mean and kill other birds... and Jay has never been socialized.. so I was sure what exactly was going to happen with that....

But, I left to get a cage and switch back my cell phone service to AT&T....
Verizon for the past few months has been awful.. it was never great.. but it has been useless... no good internet connection, text messages won't go through... made trouble tickets, called tech support numerous times, they keep telling me it's my phones and iPad.. etc...   So I bopped on over to AT&T to find out.. that they bought out the alltel towers and that verizon was piggy backing on them, so that's why my service has gone down to marginal...
I was able to switch my phone number and iPad over to AT&T.  The iPad was immediate but the phone is still verizon because I had to order a phone.. and as soon as I set the phone up.. I'll be on the AT&T network... Last night, I was trying to stream music and youtube videos.. and check out the service.. and holy crap it was working.. so i'm pleased as punch with that...

I had gone to Columbia with my parents, and before we made our way back home, we stopped at the restaurant supply store, I got two containers to proof bread in, and got some grape leaves..  I see stuffed grape leaves in my near future :) then we went to the Texas Roadhouse for the early bird special supper..

Which we did.. then we went to Publix on the way home, so I could grab some wild bird food.
and then my mom was shopping so I went all around that store.. bought wheat germ. (put that on my yogurt this morning and it was good), Chai Tea because I haven't had that in forever, Cracker Jacks for my cowboy as a surprise when he gets back from Texas and some Olive oil.. haha.. what a mixture of stuff huh?

Well, After we got back from the city, we (dad and I) checked on the bird and she had passed away...
I felt bad about that...
but, I will burry her tomorrow, it's been raining for a few days straight and it's muddy...

I did get a surprise in the mail today from my Best Shittin' Friend Mels in Georgia :)

She knows me very very well.. :)  I love her and shit :)

Creamy Poblano Mac & Cheese and Spicy Avocado Chicken

1 teaspoon salt
1/4 teaspoon ground black pepper
1/4 teaspoon ground cayenne pepper
4 skinless, boneless chicken breast
2 tablespoons olive oil
1 red onion, minced
2 tablespoons lime juice
1 avocado, diced
Salt and ground black pepper to taste

1. Stir 1 teaspoon salt, 1/4 teaspoon black pepper, and cayenne pepper together in a small bowl; rub evenly into the chicken breasts.
2. Heat the olive oil in a skillet over medium heat; cook the chicken in the heated oil until no longer pink in the center and the juices run clear, 5 to 7 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
3. Stir the onion, lime juice, and avocado together in a bowl; season with salt and pepper. Spoon over the chicken breasts to serve.  

These Little Town Blues, Melted away.... for a weekend

Got up Friday morning and headed off to the Airport.. We get to Charlotte and I get stopped at the security checkpoint... because I had sparkly shit on the ass of my wranglers..
so they swabbed my hands looking for explosives.. which apparently I had on my skin..
so then I got taken into a room with two women.. and they searched my bags.. then said they were going to pat me down.. so I told them I was glad I shaved that morning... they were laughing at me.. because I was full of shit and one liners at this point..
Finally Make it to LaGuardia and find my uncle and gramps waiting for us..
so we get in the car with them.. and make our descent into this trip...
Our first stop was a hot dog stand for a dirty water hot dog, then to this wonderful place called the shake shack.. for one of the best burgers I have ever had...
hands down.. my uncle was explaining that this guy grinds 3 different types of meat together to get this flavor.. and oh my god it was great..
He said it was brisket, chuck and sirloin or some type of steak cut of meat all ground together...
It was phenomenal...

After that.. we headed across town and stopped at a place called Salumeria Rosi Parmacotto..
and had some light appetizer...
we got some prosciutto de palma and italian ribs..

Then we loaded up and headed a few street over for a 4 dollar chocolate chip cookie..
this place was wonderful.. and it was about 1/4lb of cookie fresh out of the oven!! this heavenly place was called levain bakery..

From there.. we be-bopped over to Keste... to have the first taste of italian neapolitan style pizza.... *deep longing sigh*  we had a basic margherita pie..

and Madone! it was good..

then we went to Grom for Gelato.. but gelato that is il gelato come una volta.. and it was awesome..
we all piled back up in the car and headed out to Staten Island to drop our junk off at the house.. and stopped long enough to have a cup of coffee.. and then headed to coney island to visit the original nathan's..... which we all had hot dogs there..

and then hold onto your britches because we headed BACK to china town in manhattan to have late night chinese food and abuse the people.. hahah

and we made it back over the verrazano about 3:30am... and went to sleep...

Day 2

started off early with Dyker Bagels and a everything bagel...
Then I decided to go check on My Grandmother and Great Grandma... they were both doing well, and their Gravestones were good and the grass was cut.. so I said hi to them.. and we headed to Lombardi's to the Harley Davidson store... then we hit the Verrazano and headed to Brooklyn...

We made it to L&B pizza.... and I could have died a happy woman.. with my sicilian pie and spumoni....

we then headed to Fiacco's in Brooklyn for a "greaseball" sandwich that my uncle has invented.. and it was amazing.. along with broccoli rabe arancini.. a piece of italian information I forgot about.. but, my uncle surprised me with it :)

We then headed to Rye in williamsburg... to have a drink and walk around and see all the new development..

After this, we headed over to the Feast in Little Italy...
I needed two things....  Mozzarepas and zepolis..
but, before we got there, we were diverted to some mexican hole in the wall.. where we had an ear of mexican corn... I don't know what all was on it.. but, it was awesome topped with taco seasoning hahah..

We left the Feast as quick as we could, there was a ass load of people.. and we had places to go.. hahah

So from there, we headed to Blue Smoke to have a Mojito

Then we headed back towards the lower east side to drive through St. Marks to watch the freaks and then hit up a new desert place called chickalicious...
it was pretty darn good... we had a sample of a bunch of different stuff.. and headed to Katz's from pastrami and a Knish..

I will admit... I opened the car door and couldn't do it... I was about to pop....  so we went back to Staten Island to had a drink and coffee and digest a hot minute...

Sunday we woke up.. and went to a Pastry place my uncle helped develop the menu... and I can't even begin to explain what we ate.. but, I took a picture of one cream puff thingy I had..


After we had a few espressos and enough pastries to feed a starving african village.. we went to my most missed store... pastosa ravioli, and I got, Raviolis, locatelli cheese, pecorino romano, sharp provolone, a whole hot soppresata and anything else i could fit into my bag...
then went to the bakery for sfogliatelle and sesame seed cookies.

I also went into Royal Crown bakery for seeded semolina bread.... and we were off to the Ferry Terminal.. for old time sakes...
we took the ferry to manhattan and my uncle picked us up and off to the airport we were...
I had a great time... I miss New York... but, I love my life here in South Carolina... 
I am very thankful for knowing the best of both country life and city life...

Rained Out

This weekend we were supposed to do the Ag Expo Half time show at the Rodeo...
well, We were T-Totally rained out it is a sopping mess around here... and it's still raining..
I'm not really complaining, because we needed the rain and all, but, I'm more excited about the cooler temperatures that are coming in with this weather front.
Saturday I was so stir crazy, I baked all kinds of stuff..
Gluten Free Peanut Butter Cookies, Cranberry walnut power bars.. and I would have kept going but, apparently the galvanized pipe leaving the hot water heater in the house decided to spring a leak.. and we had no hot water, we got that fixed and then batted down in the house, I read books, I played on the iPad I piddled around.... did a shit ton of laundry.. and that lead us to Sunday..

Sunday my poor cowboy wasn't feeling well, he actually hasn't been feeling well for a week or so, and he decided he wanted to take the day off and marinate on the couch.. which is fine.. but, I was about to go stir crazy from the previous day.. so I called my Mom up and off to Columbia we went, we hit TJ Max pretty hard and two stores in the mall, then the Wine store and sat at Starbucks and had some overpriced expensive Coffee, while we people watched..
we nada close encounter on the way to the wine store... I was sitting at the red light, driving my mom's car.. and our light turned green.. and I looked left, then right and saw a big crown vic car come barreling through the intersection.. and I looked back up at our light and it was green... then the guy hangs a left and comes headed on two wheels squealing across the 4 lanes of traffic up onto the curb, to our left, and hits the light pole....  I looked both ways a few more times, and drove on.... we get to the wine store and we get to talking, and my mom is like wow that was freaky.. I'm glad you didn't go when the light turned green.. I was like yeah.. but, ever since I took that motorcycle class I wait like 3-4 seconds before I go...

So Once, I got home I got to remodeling, took out all the halloween/fall decorations and started burning pumpkin spice crap.. :) 

Protein Bars
Home Made Protein Bars

1 cup uncooked old-fashioned rolled oats
3/4 cup uncooked quinoa
3/4 cup sweetened dried cranberries, coarsely chopped

1/2 cup salted, dry roasted nuts, chopped
1/3 cup flaked unsweetened coconut
2 tablespoons flaxseed meal
1 ounce bittersweet chocolate, finely chopped
1/2 cup unsalted creamy almond butter
6 tablespoons honey
1 tablespoon olive oil
1/4 teaspoon salt

1. Preheat oven to 350°.

2. Spread oats and quinoa on a baking sheet. Bake at 350° for 8 minutes or until lightly browned. Cool. Place oat mixture in a large bowl, and stir in cranberries, nuts, coconut, flaxseed meal, and chocolate.

3. Combine almond butter, honey , oil, and salt in a small saucepan over medium heat; bring to a boil. Cook 1 minute, stirring constantly. Pour almond butter mixture over oat mixture; toss well to coat. Press mixture into an 8-inch square glass or ceramic baking dish coated with cooking spray. Bake at 350° for 13 minutes or until lightly browned. Cool completely in dish. Cut evenly into (1 x 4-inch) bars.

Gluten Free Peanut Butter Cookies

1/4 teaspoon salt
1 large egg white
1 cup chunky peanut butter
1/3 cup honey
1/4 cup brown sugar

1. Preheat oven to 375°.

2. Place salt and egg white in a medium bowl; stir with a whisk until white is frothy. Add peanut butter, honey and brown sugar stirring to combine.

3. Divide dough into 20 equal portions (about 1 tablespoon each); arrange dough 2 inches apart on a baking sheet lined with parchment paper. Gently press them down. Bake at 375° for 10 minutes or until lightly browned.
