Happy halloween!

Yesterday I went hunting in the morning....  I didn't see anything except birds.. which I didn't mind.. I was enjoying being outside... My dad met me at my house and we took the mini truck out back to the low pastures and I set up in the tree stand and he sat a few pastures over from me...  neither one of us got anything.. but, that's why it's called hunting and not killing :)

I did make a soup with chicken apple sausage with apples, cabbage, zucchini, carrots, onions and garlic.. it was quite tasty :)  I would make that again...

and here at the office for halloween I went ahead and dressed my babies up :)

Marine Corps and Motorcycle filled weekend

Thursday night we headed down to Beaufort to stay at a Marine buddies house, and bright and early Friday we headed over to watch Bekah graduate as the series honor graduate :)

Then we had a pig picking' Friday night, after we rode the motorcycles all around beaufort... which I became real comfortable on that bike after some of the crap we drove through hahaha.

We hung out in beaufort most of Saturday and I drove us back home, then Sunday morning we got up and met up with a couple of people. then we rode the bikes up a few exits and met up with a few more and a whole group of about 8 of us, headed up towards Lake Lure.  I had never been there.. but, let me tell you what... nobody puts baby in the corner... haha.. that is where dirty dancing was filmed and it was absolutely fabulous...  

I was sitting on a bench and i slid over and I got a splinter in my ass.. well not ass but, in my upper thigh.. so I got hobbling over to the bathroom with clint and I told him he needed to pull a splinter out of my ass.. hahah
so I'm in the mirror and I am looking at this thing... and i'm like.. dang.. that's a thick splinter.. so i try to pull it.. and it was stuck.. so i pulled it even harder.. and pulled out like a 2" splinter....
Clint was like holy shit that's a big splinter... then he told me I needed a tetanus shot.. haha
after that we headed up into the mountains on the bikes, and it was so pretty... orange and yellows and reds all over the trees.. it was truly a beautiful day...
we did about 300 miles on the bikes...

daytona beach and pumpkin beer

this past weekend I went to Atlanta to go to a  seminar.  And my cowboy went to Daytona Beach with some Marine Corps Buddies and they met up with my father and cousin while they were down there..
Now, I went for a seminar, and on the way back Saturday night, I decided to stop by the whole foods market and I loaded up on two important things in life.. cheese and beer.. hahaha.. I really went there for cheese and to see what was new and healthy.. then I found this little sign that said "pumpkin patch" and over it was all sorts of pumpkin flavored beer.. so instead of deciding which one to try... I just filled the cart up with one of each.. :)

Then after that adventure.. I tasted one of each.. and put them in order from my favorite on the left to least favorite on the right..

now before you go thinking I'm a drunk.. haha... I did have help, my brother and friends were there to help me along... :)

the next morning we experimented with pancakes..

That's right.. that is a pancake with a piece of bacon in it....
then my brother brainstormed and decided that we needed to make a sandwich.....
which we did....

I think my arteries clogged a little that morning... but, none-the-less it was worth it.. hahahah

we smothered that bad boy with syrup and that was that..  :)

Tonight, we are off to Parris Island to watch a friend of ours graduate. I say friend, she is the closest thing to a daughter I'll ever have.  her mom is a druggie in and out of prison and poor girl doesn't even know who her father is.. and she competes with us.. and we kinda took up with her.. and she wanted to go into the military and we are a Marine family so, she went into the Marines and is graduating with the highest honors...   I can't wait to see her.. I am so proud of her..

there will be a pig pickin' tomorrow  :)  and you know how that will go!!

Rainy weekend and a wedding

Saturday, we ate breakfast, rode some horses and then headed over to a wedding.  I almost thought it got rained out..  The wedding was supposed to start at 5, and about 4:59 there was a downpour like no other.. then it stopped a few minutes after that.. and all was well.
we hung around for a little while and then headed over to a friends place for a cookout.

and that was about it for Saturday.

Sunday we woke up and it was foggy and misty raining so we went to church then to get a new freezer, since ours crapped out on us a while back and then back home,  we finished up the season 1 of blacklist and started on season 2 of Vikings.  not much to do in the rain  :(
I did manage to throw together a crockpot of chicken and butternut squash that turned out awesome.. and that was about it..

Chicken and Butternut Squash slow cooker

package (about 16 ounces) cut-up, peeled, seeded butternut squash

large apple, sliced

medium onion, cut in half and sliced (about 1/2 cup)

cloves  garlic, chopped

pound  skinless, boneless chicken breast halves

can (10 3/4 ounces) Campbell’s® Healthy Request® Condensed Cream of Mushroom Soup

tablespoons chopped fresh sage leaves or 1/2 teaspoon rubbed sage

cups fresh baby spinach

1/3 cup grated Parmesan cheese

cups  whole wheat couscous, cooked

Put the squash, apple, onion and garlic in a slow cooker.  Top with the chicken.  Pour the soup over the chicken.

  • Cover and cook on LOW for 8 to 9 hours  

    then add the spinach at the end until wilted and serve over couscous or quinoa..

Lunar Eclipse and the Highway

So, We got up early to walk out to the pasture and watch the Lunar Eclipse...
It was pretty short of amazing :)
I love eclipses and astronomy, hell I'll even go as far as to say I enjoy Astrophysics hah..

Today, Clint wanted to get a new windshield for his motorcycle.  so I had to get fuel.. and the highway was right there..

So he asked me if I wanted to get on the highway (Which I had never been on, in the motorcycle before) or go the back roads, which were about 8 miles away.... I was thinking.. and it really wasn't that cold with all the leather on.. so I said... we can try it... so off we went.. and I had a moment.. which reminded me of a scene from the movie Clueless. yeah that was me.. screaming in my head real loud "I'm gonna die.. I'm gonna die.."  then I got up to about 80 and I was like.. oh... wait.. this ain't so bad.... hell yeah...
So then we get to the Harley dealership and I get off my bike, and I pulled my helmet off and I said.. "yeah.. that's right.. I'm a bad ass"  hahaha... it was awesome..  so on the way home, I lead us home, but did switch over to the back road, and I'm glad I did, because the trees are slightly turning and I was excited to drive through leaves and smell them...  So, that was my eventful morning... I'm here at work.. still kinda wishing I was riding... :)
I did manage to buy a sound system for my bike.. I can't wait!
